The Kozaemon Naokumi I drank last month was so good that I bought it again. Gorilla labels are very eye-catching. Not much aroma, mostly koji and alcohol aroma. Strong fizziness! It's refreshing and fizzy! There is no sweetness; bitterness is the main taste. Not pure bitterness, but a subtle and gentle bitterness like grapefruit. As soon as the bitterness comes out, the umami suddenly appears, albeit briefly. It is drier and cleaner than the aroma suggests. Low alcohol content makes it very easy to drink, and it goes down smoothly. Emptied in about 20 minutes, regretting that I only bought one bottle 😭.

This sake is made from 50% polished Akita sake-komachi rice. But the specs are Junmai sake? Fresh green apple-like aroma mixed with a little alcohol aroma. The sweetness is moderate and refreshing. The hint of lychee in the aroma is very strong and umami is also present. It has a deep flavor and makes you feel rich. When I buy non-paper-pack sake, I go to my local Yamakawa Sake Shop. I choose from the "Recommended" list, referring to the description on the pop-up. My budget is about 1,500 yen. This time it was a Haneya Jun Gin Kohi Nama Genshu. Toyama's sake It's fruity and sweet like modern sake, but not too much. The alcohol appears as a soft bitterness in the aftertaste, not a salty taste. I think salty snacks are good.
