Kacho Fugetsu's "Moon" series It has a cream cheese and nut-like aroma, which is in harmony with the moderately rich flavor of Yamahai. I like both unfiltered raw sake and Yamahai, so this is a great sake for me. ...... I would like to pair it with a mild miso.

Contrary to the sweet aroma, it has a spicy taste with a hint of bitterness. The owner, who drank it freshly opened, said it was like water, so I wonder if the taste changed over time. The aftertaste is not so long, and it is best to eat it with a little soy sauce or salted wasabi with sashimi, which you can feel the fat and flow easily.

Rounded fruit sweetness that doesn't betray the aroma. Muscat, ripe honey-like melon with a decent amount of alcohol (not too much). I wonder where this flavor comes from for a Junmai Ginjo Hiiryuu...it is so delicious! It has a modern taste. I recommend it to women who like sweet sake.

If you drink it chilled, it is easy to drink (like water), and it has a little bit of good bitterness. If you drink it a little higher in temperature (not even at room temperature), you can feel the sweetness strongly in the attack, and the bitterness becomes stronger as well as the umami, but I like it better this way.

If you drink it in a wine glass, the aroma is too strong and the fruit and sweetness are strong. You can feel the gentle sweetness without the harshness of unpasteurized sake. The aftertaste is mellow and leaves you with the feeling of being wrapped in the sun. Think of a strong, sweet woman. I wonder what would go well with ...... carrots pickled in rice or something fragrant but not overpowering. Salt French hops with French Mediterranean salt No.65 A slight sweetness comes with the aroma, but when you put it in your mouth, it definitely has a rich hop flavor and taste. There is no alcohol weight at all, and I'm glad I could think of someone to recommend this to!

It's been over a week since I opened it. When I drank it in a Riedel Junmai glass, the taste was mellow and round, with a strong sweetness, and all the bad parts were gone. It has a lactic acid-like aroma. Mellow and dense. Is it because it is matured? Even if the aroma is as strong as sansho (Japanese pepper), it has a good strength. I was able to buy it for less than 1,000 yen at the supermarket, but this makes me happy!

I got to do a tasting. It has the depth of flavor that is typical of a traditional sake, but it is also more gentle, with a good sweetness and a strong aftertaste. I was able to compare it with REGURUS, so I was able to feel the charm more.

The sweetness and acidity are so good that it is hard to believe the rice polishing ratio is 88%. The flavor of the rice is combined with the sweetness and acidity, and the mellowness and sharpness coexist. It goes well with miso dip of ginger.
