摂津人It has a moderate ginjo aroma with a hint of sweetness and a little acidity. It has a rich umami flavor with a bitter aftertaste that finishes with a crisp finish. The sake rice is Watafune No. 2, the brewer's own ginjo yeast, and the taste is a bit bitter and sharp on the finish. But it is my favorite type of sake. I think Koga in Shiga Prefecture is a region that produces delicious sake.

摂津人Sakonishiki is a sake rice that I have never heard of before. It is a daiginjo, but there is no ginjo aroma. On the palate, there is a slight sweetness from the rice. The taste is firm but light, with a touch of bitterness and a sharp finish. When heated, it tastes soft and fluffy. Delicious. It is also delicious when heated. I would like to drink it heated in an air conditioned room in the summer. This is the most delicious heated sake I've ever had.

摂津人I found out that Morinokuma-san is Kumamoto's rice rice. The rice is polished to 59% and has a gorgeous ginjo aroma. The palate has a gentle sweetness of Takachiyo, and since it is 16%, it does not have the heaviness of the original sake, but has a robust flavor. The finish has a bitter taste. Delicious with rice as well.

摂津人Comparison of five breweries (Banshu Issen, Junsei, Morinori, Rairaku, and Senzuke) at Yuasa Sake Shop. Each brewery brewed their own sake from Yamadanishiki (60% polished rice) harvested from a single rice field. Among them, my favorite was Morinori. It had a mild ginjo aroma, a gentle sweetness, and a rich Yamadanishiki flavor, with a slightly bitter finish that made it easy to drink. Delicious.

It's a +5 sake, but I can taste the sweetness of the rice, the mellow mouthfeel, and a nice bitterness. I'm glad I chose Akita Sake-Komachi. Delicious!

It is a Yamahai sake due to the sweetness and freshness of the raw sake, but it is very easy to drink. It has the sweetness of rice on the palate and a slight sourness and bitterness in the throat. 摂津人This year I'm starting work in Gero and Takayama in Gifu Prefecture again, and the first thing I did was buy some Junmai Ginjo sake from Tenryo Shuzo in Gero, which I'd never had before, because I was curious about it. It has a slight ginjo aroma, a gentle sweetness and umami taste, and then snaps out of it. It's an unpasteurized sake, but the alcohol content is 17 degrees, so you don't feel the weight of the alcohol. I think I might drink too much. It's delicious. It is even easier to drink if you warm it up to about 40 degrees Celsius. I'm drinking it while eating tempura of Himetake and cod roe.

摂津人When I was a student, I don't know why gymnasts and cheerleaders used to buy them. I thought the yellow color was because it was passed around from department to department, and because it was old, it had deteriorated and turned yellow. I'm sorry, I didn't know anything about sake. When I try it now, it's thick and has a matured feeling like Shaoxing wine. It's better to drink it hot than at room temperature. Because they sell only aged sake, Kenryo is not one of the Nada breweries that opens its brewery for new sake. For better or worse, this sake reminded me of many things from my school days.

摂津人I buy it at a liquor store in Morioka as a souvenir for myself. It is 100% Miyamanishiki, dry but with a hint of sweetness from the rice. The aftertaste is crisp and clean, making it easy to drink. It's even smoother and easier to drink when it's lukewarm, and goes well with all kinds of food. I've been drinking it with simmered sea bream. It's delicious.

It has the aroma of fruity nama-shu, a little sweetness on the palate, a little fizzy, and then the bitterness and sourness of nama-shu. It's 18 to 19 degrees, so be careful not to drink too much. I'm looking forward to seeing how the taste changes after tomorrow. After drinking and eating, I enjoy the sour taste of dekopon at this time of year.

The aroma is only faintly fragrant, and you can feel the sweetness and flavor of the rice on the palate. When you finish it, it has the weight of 18 degrees alcohol, but the aftertaste is refreshing and delicious. It is a solid sake that is worth drinking. The second day after opening the bottle, it has become mellow and easy to drink.

摂津人It was a little over 2000 yen, but I bought it at Itami Airport as a reward for returning from a long business trip. The mouthfeel is fruity, and if you ask me, it's a banana feeling. There is no foaming feeling. The sourness is pleasant, and it has the drinkability of general nama-shu. It's so easy to drink that you'll think it's a namahachi, but you won't feel the graininess unless you taste it carefully. I don't know what a namahachi or yamahachi is.

摂津人Since I stayed in Kitakami, I chose this sake instead of Taxi Driver. 1650yen/4gou bottle. There is no particular aroma, but you can taste the sweetness and strong acidity of raw sake. No fizziness. When I listen to this song on YouTube while looking at the snow outside the window, it's a melancholy Showa era melody from before my time, and I think I'm going to drink too much.

摂津人When we came home from Tohoku, we wanted to buy a local sake, so we bought a bottle of Nada's sake, Nanabai. It's made from 100% Yamadanishiki from the sake brewing process, but unlike the Daishichi brewing, it doesn't have a grain smell or taste of grain, so I don't know what the principle of the sake brewing process is. But the taste is a little sweet and easy to drink. The sake level is about 1 or 2 degrees. It's easy to drink when it's lukewarm or warmed up, but the bitterness only increases a little. It is one of my favorite sakes from Nada. I'm glad that Nada breweries will let you try it at Corona.
