Third drink of the day. Brewed in Shiga, northwest of Lake Biwa, using local sake rice Tamakae. Made with local sake rice, Tamakawai. Warmed to hot. It has a strong umami flavor and is mild. Well-balanced acidity and sweetness. Best served with aged cured ham, where the two personalities combine.

This was my second drink of the day. The other day, I had a very good Etsukaijin junmai sake (Akaban Omachi) warmed up, and this time I had a junmai ginjo (Hachitan-Nishiki) lightly nigori raw, served cold. It was great with cold vegetables! But my memory has drifted. Just a reminder of what I drank.

Shichibon-Yari is a sake that uses local Shiga sake rice "Tamakae". It is a limited time only "freshly pressed" sake, for which I am grateful. The other day, I drank "Ki-no-Kan," a sake brewed in wooden vats, and enjoyed it so much that I bought this one. It is fresh, clear, and sweet, but has a nice sharpness. It has a rice polishing ratio of 60% and is almost like a ginjo. Great as a food sake. (I paired it with a hot pot). One of my top 3 favorite brands!

The fluffy white color is like snow. The texture is thick and heavy on the tongue. The richness of rice and amazake-like flavor remain pleasantly in the mouth even after passing down the throat. Gold and silver snowflakes are dancing on the label and piling up on the camellia. Winter will soon begin to leave. It was the perfect time to open this new nigori sake.

At IMADEYA Ginza. This sake is made in a wooden vat. The fresh sweetness of rice spreads on the tongue and the aroma passes through the nose. With a rice polishing ratio of 60%, it is both gorgeous and full-bodied. It is not too sweet and has a good balance that makes it suitable for a mid-meal drink. Very much to my liking!

At IMADEYA Ginza. 2016 production aged sake. The aroma from the wine glass is mellow, but when you drink it, the aroma is elegant and calm. It has a soft mouthfeel with no corners. The deep umami flavor is melting on the tongue.

Purchased at the Asahi Sake Brewery, which I happened to pass by in the Izumo City shopping street during a trip to Shimane. The junmai ginjo zodiac sign label and design were very cute. The first sip has a clear ginjo-like aroma with a fluffy, gorgeous flavor. Immediately after, there is a strong, firm rice flavor. The aftertaste is dry. It is a pleasant sake, just like a dry and sunny day.

Edo-bari. Nama-hashiroshi, unfiltered, unpasteurized sake made from reduced pesticide Yamada-Nishiki. The label is also beautiful. I heard that the rice polishing ratio is not written on the label, but it is true. When the lid is opened, carbonation leaks out. When you pour it in, it is a sizzling sensation. It has a sweet and sour taste (is this what a banana smells like?). Fresh and cool. It tastes so sweet. I like it very much!

Junmai sake, spring orikarami. I had a junmai ginjo of the same brand before, so I compared it to this one: it has the freshness of a nama-shu, but I could feel its strength. It is dry and crisp. I enjoyed it with a macaroni salad with suridate mayo. (Suridane is a seasoning made by frying red pepper, sesame seeds, and Japanese pepper in oil, which originated in Shinshu.)

It has a soft and fluffy mouthfeel in the beginning, a firm rice flavor in the middle, and a clear and refreshing finish. We enjoyed it with lotus root kinpira (fried lotus root with Japanese pepper), celery and mushroom marinated with herbs.
