Shichibon-Yari is a sake that uses local Shiga sake rice "Tamakae". It is a limited time only "freshly pressed" sake, for which I am grateful. The other day, I drank "Ki-no-Kan," a sake brewed in wooden vats, and enjoyed it so much that I bought this one. It is fresh, clear, and sweet, but has a nice sharpness. It has a rice polishing ratio of 60% and is almost like a ginjo. Great as a food sake. (I paired it with a hot pot). One of my top 3 favorite brands!
