The thickening of the rice does not give it much of a sake-like feel. Since it was summer, I drank it on the rocks, but the aroma that passed through my nose and the feeling of rice on my tongue were still sake. It is not bad to drink strong sake on the rocks. A chaser is necessary to prevent overdrinking.

This sake is a Noto reconstruction support sake. The story goes that the Sakurada Sake Brewery, located in Suzu City, Ishikawa Prefecture, was instantly destroyed by the Noto Peninsula Earthquake. The brewery's head brewer, Mr. Hirokatsu Sakurada, has been working to rebuild the brewery step by step from the rubble spread all over the area. This sake is a blend of miraculously surviving Noto Hatsusakura Honjozo and Tengumai, the taste of which was supervised by Mr. Sakurada. Proceeds from the sale will fund the reconstruction of the Sakurada Sake Brewery. Please support Noto Hatsusakura. I was able to purchase this. Unexpectedly, it is a light amber color. It has more acidity than sweetness, so it is a food sake.

I opened the first Kuheiji-san in a long time at my daughter's birthday party. The taste is a combination of acidity and roundness. We had it again today in a wine glass, and it is possible to enjoy the aroma as well as the taste. The other day, a person who was fascinated by Kuheiji's sake and even built a relationship with us and the owner passed away. We received this bottle with a variety of emotions.

It has been a long time since I had a Saturday night dinner. After all, it is Yamada-Nishiki. You can taste the sweetness and sourness of the rice together. When you put it in your mouth, you first taste the acidity, then you feel the fullness and flavor in your mouth, and it goes down your throat. I had bought it a while ago and kept it in the fridge until I was ready to drink it. I have not been able to enjoy this sake with sashimi from my favorite fishmonger due to a recent business trip on the weekend, but now I can finally enjoy it. The light acidity and the sharpness and umami of the Yamadanishiki coexist in a satisfying way. It is still delicious.

We first had it at almost room temperature. It is a sake with a lot of acidity and a sense of rice afterwards. As the temperature drops, the lightness of the sake increases and you realize that it is a Niigata sake. On the second day, it was served on the rocks because it was not chilled. It was a very satisfying evening drink as I was able to further appreciate the unexpectedly beautiful flavor. Thank you very much.

It is brewed with Yamada-Nishiki and is a Nakadori. As you can see, the rice is tasty and smooth, but I feel that the characteristics of Yamada-Nishiki, which also has ample umami, are very well expressed. This is my first sake from this brewery, but it has a very beautiful flavor that shows the underlying strength of the Chugoku region's sake breweries. I enjoyed the mellowness that emerged when the temperature was raised a little.

Today I opened a full-flavored, delicious sake. The mouthfeel and aroma are mellow, and both acidity and umami are very well balanced. I had it in a wine glass, and at first I was sensitive only to the deliciousness, but as I drank more and more, I noticed the light nigori color. It is a truly delicious sake. It was my first time to drink Kuheiji's nama-shu, but it was so delicious that I was completely defeated (lol). It is Yamadanishiki from Kurodasho, which I have also visited. It goes into your body easily without any snagging, and only the deliciousness returns to you.

It is a Noto support sake. It was served lightly chilled. At first, the mouthfeel is more sour than sweet. It is a very sour taste on the tongue, and it is always sour, which may be a characteristic of this sake. I am nowadays looking for more sourness than sweetness when drinking sake. It is a 1.5 liter bottle, so there is enough to drink at room temperature. The label says that the Noto Peninsula earthquake had forced the Noto Brewery to abandon sake brewing, but the Kurumata Brewery was able to save the moromi and make it into sake.

This sake is brewed with rice grown in Yokohama. When you drink it, you will first taste a light acidity, followed by a refreshing and slightly bitter taste. I was introduced to this sake at one of my favorite liquor stores and immediately made a reservation. I would like to continue to enjoy locally produced, locally consumed sake.

This is a bottle of regular sake given to me by a relative in Nagaoka. I enjoy its lightness and sharpness more than its riceiness. I was starving for sake after returning from an overseas business trip, so it soaked into my body. I enjoyed it with sashimi from my favorite fish restaurant on a normal weekend. Thank you very much for the sake, and I am very happy to be able to drink sake that was not available in the premium sake category 30 years ago.

It is the only brewery in the 23 wards of Tokyo, and I thought the only sake from Tokyo was from Okutama in the west, but I would like to support this new challenge. As I proceeded to drink it, I felt a good sense of hardness in the mouth. I felt that this was Tokyo water. Sake I have been drinking takes off its hardness as it approaches room temperature, so I did not have a bad impression of this either, and it was a new discovery. This is also individuality. Purchased at the Hokkaido Products Museum in Yokohama, the label is reminiscent of beautiful snow. The flavor is light and pleasant, with a beautiful taste that goes down your throat nicely. It is not too frizzy and my wife drank a little and we finished the four-pack.

It is the most gorgeous taste of a fresh sake in a long time. It is a Sanuki sake, which is not usually drunk, and is made from Yamada-Nishiki grown in Shikoku. It has a slightly fizzy taste in the mouth and a strong rice flavor, which is probably because it is Yamada-Nishiki. As it approached room temperature, the sense of rice increased even more, and I wondered if this was also the power of the rice. It is slightly effervescent. When I opened the cork, I felt air leaking out. You can enjoy the fizzy sensation on your tongue when you put it in your mouth. The sensation through the nose was unexpectedly earthy and earthy at first, which is rare for a sake. It is 2023 (brewed in the 2023 brewing year). It has the richness and sharpness of Yamadanishiki rather than mellowness. The Kyuheiji we had just before that was also made with Yamadanishiki. There are rice varieties suitable for sake brewing, aren't there? I really wanted to buy Kuheiji's Kurodasho at the liquor store today, but unfortunately they didn't have it, so I bought Houou Mita, which I had wanted to drink for a long time. Thanks for the treat. It has more acidity than sweetness and a little bit of a schwashy feeling. I wasn't planning to drink it today, but I opened a bottle of my treasured sake because we had duck hot pot for dinner. I think this sourness goes well with fatty food. For example, steak🥩 or sukiyaki. The second day I opened the cork, I heard a popping sound and it was delicious. It is really delicious.

It is truly Omachi from Okayama Prefecture, where Omachi was born. When you drink it in a wine glass and enjoy the smell, you first get a sense of the earth (soil).
