Nagoshi Zake seems to be a sake classified between Natsuzake and Hiyaoroshi. It has a mellow aroma like melon - magic. It tastes fruity with a hint of acidity. The aftertaste is slightly alcoholic, but the sweetness is light and refreshing, making it the perfect sake for a meal.

Matsumoto's local sake Dai Shinshu at a pub in Matsumoto. When you take a sip, it is as refreshing and easy to drink as water. After that, it goes through the nose. This was a stable sake.

This is the first Hououmida. It has a peachy fruity aroma. The taste is thick and juicy. When it was cold, it had a slight bitterness and an angular impression, but as the temperature dropped, the sweetness increased and it became mellower. It seems that the taste changes after opening the bottle, so it will be a bottle that you can enjoy for a long time.
[Postscript] When I drank it two days after opening the bottle, the sweetness and depth increased and it was like a different kind of alcohol. It's not bad to drink it slowly like this!

This is the Shinsei I've been longing for. It has a rich taste and a good acidity. The aftertaste is complex with a good balance of bitterness and sweetness. I was lucky enough to get this Senkou Akatombo. Following Kabutomushi and Senko Hanabi, this is my third Senkou, and one of my favorite breweries. When you put it in your mouth, it's juicy and mild with acidity, just like Senkou. My first impression was the same as Kabutomushi and Senko Hanabi, but the aftertaste was a little bitter and I thought it was autumn sake. I'm completely captivated by Senkou.

My long awaited instrument Masamune! The sake here is, in a word, cosmopolitan! It's a Honjo sake, so the price is an amazing little over 1000 yen for a 4-gallon flight. Even so, the taste is very juicy with an aroma and flavor like a pear. The taste is also rich and reminds me of the Jyushiyo I drank a long time ago. The aftertaste was a little bitter and the alcohol was a little disappointing, but overall it was a well balanced and wonderful sake. I would like to try the Junmai next.

An alcoholic drink I found by chance. It has a low alcohol content of 6%. The sake is cloudy and the aroma is sweet and sour like yogurt. It is refreshing in the mouth. It has a sour taste, and then a little sweetness remains. The sake was originally made to go with Kagawa's famous bone-in chicken, so we had garlic steak with chicken thighs as a snack. After eating oily meat, pouring this sake in neutralizes the oil, and you can enjoy an endless loop of meat and sake. I was very satisfied with this unusual sake.

This is the third Kaze no Mori. This time it is the standard alpha type.

I was lucky enough to get a bottle of Senkou's Sparkler. This is Senkou's autumn sake, whose stock has been rising rapidly since the last Kabutomushi was right up my alley.
It has a clean and fruity aroma, and when you take a sip, the sweetness and acidity come rushing in. It is similar to Kabutomushi and has a light impression, but it is still an autumn sake and the juiciness is much different. The aftertaste is also different from Kabutomushi, which is refreshing, and it leaves a little bitterness, just like the sparklers at the end of summer.
The accompaniment was spinach, Chinese cabbage, chicken thigh meat, and cod. The soup stock is just boiled with sake and kombu, and kombu ponzu. There is no doubt that sake advances.
