I was lucky enough to get a bottle of Senkou's Sparkler. This is Senkou's autumn sake, whose stock has been rising rapidly since the last Kabutomushi was right up my alley.
It has a clean and fruity aroma, and when you take a sip, the sweetness and acidity come rushing in. It is similar to Kabutomushi and has a light impression, but it is still an autumn sake and the juiciness is much different. The aftertaste is also different from Kabutomushi, which is refreshing, and it leaves a little bitterness, just like the sparklers at the end of summer.
The accompaniment was spinach, Chinese cabbage, chicken thigh meat, and cod. The soup stock is just boiled with sake and kombu, and kombu ponzu. There is no doubt that sake advances.
