Matsumoto's local sake Dai Shinshu at a pub in Matsumoto. When you take a sip, it is as refreshing and easy to drink as water. After that, it goes through the nose. This was a stable sake.
The dish: Shinshu Shirakaba beef tataki. We had it with three kinds of miso: wasabi, yuzu kosho, and shichimi miso.
