The regular Kaze no Mori is made by fermenting the unrefined sake under a high-temperature fermentation environment, as opposed to a long-term low-temperature fermentation.
The taste of Kaze no Mori is still there, but the impression is a little sweeter.
It is floral and sweet, with a hint of bubbles.
Not my personal central preference, but it would certainly suit those who like the sweetness of rice and the sparkling feel.
I definitely thought it was better served in a glass. With a boar's mouth, the sake feeling increases. Therefore, I found that it is something that has a Genmaicha feeling due to the aroma. It would be interesting to try it with an oinokuchi.
My impression was that it was similar to sansho.
