I've been drinking a lot of Seven Crowned Horse lately. Today, it was Junmai Nama Shiborishina. This "shiborishina" means "freshly squeezed" in the dialect of the Izumo region (I think, though it doesn't say). It's the best time of the year...but it was made at the end of last year, so that's something to look forward to. The rice is polished to 60% and the alcohol content is 17 degrees. There is no smell, but when you hold it in your mouth, the sweetness of the rice spreads throughout your mouth. The sweetness goes down your throat without being unpleasant. You can also feel the sake in the aftertaste. It is good enough for casual drinking at home. It says that it should be served chilled, but I personally enjoy it at room temperature, where I can feel it catching in my throat (in a good way). It's fun to drink it in different ways.

I went to my parents' house for the first time in a long time. So we drank various kinds of sake, and we all enjoyed "Suzune" which is one of them. Personally, I think it's too sweet... but it's popular among women. I would recommend it to people who don't like alcohol. Still, no matter how many times I drink it, I'm always surprised that it's really sake! I'm always surprised. It's a bit pricey, but we hope many people will try it!

I didn't realize that out of all the different kinds of sake I drank on my business trip to Sendai, including local sake, the one that left the biggest impression on me was the local Hyogo sake! LOL! It is Takezumi's Nasuikon, Yamahai Junmai Sake. This is the first time for me to drink this aubergine. The rice polishing ratio is 70%, this light amber-colored sake has a sharpness that is not typical of junmai-shu, while retaining the strength typical of junmai-shu, and it has a clean aftertaste. It's delicious! And speaking of Sendai, it is served with Hoya (sea squirt)... It's delicious! It was called "Vintage", but it has a very vintage feeling. (2017BY) This is one of my favorite junmai sakes I've ever had! (The number one spot for Oroku will never change!)

I've been stocking up on some local sake that I haven't had yet.... (Lately, I've had a lot of opportunities to go back to my hometown for work!) KINPO Junmai-shu by Kinpo Shuzo. When you open the box, there is a message. It details the history of the sake brewing and the lineup, and just reading it was enough to get me excited! What's more, this Junmaishu has won the highest gold medal in the main category of the "Delicious Sake in a Wine Glass Award 2021". Expectations are high! Open the bottle and take a sip. Serious Junmaishu! How can I put it, I can feel that it was carefully made. And the umami, that's it! It's good on its own, but it's twice as good with cheese! I've found an interesting place for this sake and this brewery! I'm looking forward to seeing how it changes after tomorrow, and I'd like to try it lukewarm.

Sake series from Shimane. This evening, I would like to introduce you to sedimentation seduction. I don't think you will see many of these outside of your local area. By the way, the name of the brand comes from Simbolildorf, yes, the Seven Crown Horse. It is said that the brewer and the Shinbori Farm are related. Because it is a "special" junmai-shu, you can feel the rice in your mouth. There is almost no aroma, but it spreads in your mouth. The mouthfeel is not clean and crisp, but after it goes down your throat, you are left with the sweetness of the sake without any bad taste. It seems to go well with meals. Today it was after dinner, so tomorrow I'd like to leave it overnight and enjoy a mellow sake with food! Now that the Corona has settled down, I guess it's time to enjoy a drink on the road!

Gassan縁結神話純米吟醸

Gassan is a famous sake of Shimane. I drank it after a long time. It is a junmai ginjo-shu with a rice polishing ratio of 60%, and it is recommended to be refrigerated, so I had it chilled. The ginjo aroma is not strong, and it looks like a light amber color. The mouthfeel is gentle and the sweetness of the rice spreads in the mouth. The bottle was opened a few days ago, so it has a mattari feel to it, and it is really good. It is recommended for those who like mattari more than refreshing. The name of the brand, "Enkai Myth". This is the month of October in the lunar calendar, and the Izumo area (Izumo Taisha Shrine) is bustling with people from all over Japan welcoming the gods as part of the month of Kamizai. I'm happy to be able to drink an auspicious sake at an auspicious time!

A brand I have yet to try at my favorite Kiji sake brewery. Hii River Orochi. This sake is called "natural sake", and of course the brewery, rice, and water are all made locally. The rice is grown organically and without pesticides, and dried in the sun. When you open the bottle and put your nose close to it, the aroma reminds you of whiskey. And the color is amber. The mouthfeel is strong and sturdy. However, it is not overpowering and there is no miscellaneous taste. It is the opposite of the fruity, easy drinking sake that has become popular recently. It is an interesting drink that can be enjoyed after a meal, just like a whiskey. I'd like to know more about this particular kind of sake, one that has its own particular characteristics!

This is the second sake we opened the other day. This sake, Tamo no Haru Kisan, was created by Gifu brewer Yamada-san in collaboration with Gifu University. The rice is 100% Hidahomare, and the milling ratio is 55%. And the yeast is Gifu University Yeast! When you open the bottle and put your nose close to it, you can smell the fruity aroma. When you hold it in your mouth, the sweetness of the rice spreads throughout your mouth. It's like a dessert sake, and the sweetness lingers even after you swallow. Very different and interesting from the Kyokubi we had the other day! It's still good enough, but I'm sure the taste will become more refined and it will become a great sake. I'm looking forward to seeing if it mellows out after two nights of exposure to the air ^^.

As a memorandum. When I went to Gifu on a business trip, I got this sake produced by Gifu University. The rice is also local, Hidahomare. The rice polishing ratio is 55%, and the alcohol content is 15 degrees. Its name is "Tamo no Haru Quarry". It is easy to drink and has a clear taste, but when it goes down your throat, you can feel the sake. You can feel the youthfulness and look forward to the future. It will be interesting to see how it changes after a night of drinking, and how it changes with food. Actually, there is one more kind... so I am looking forward to that one too.

I went to Miyoshi City in Tokushima Prefecture on a business trip. Ikeda High School, a famous high school baseball school, is located in this city. And we had a meal and a drink in the limited time of Corona. I had some local sake. Miyoshikiku Junmai. It has a faint smell, and when you put it in your mouth, you can feel the fruity sweetness of the rice. The aftertaste is not stubborn, and it is a sake that you can enjoy Junmai. I also drank Junmai Ginjo, but personally I prefer Junmai where you can enjoy the feeling of rice. I hope the world will settle down soon!

Gifu is Tajimi's Sanzenmori, and this is the first sake I've ever had. I still don't properly understand the definitions of "Amakuchi" and "Karakuchi" in sake, but I was recommended to buy Karakuchi. In a bottle! It is served well chilled in the refrigerator. It is refreshing and dry. The mouthfeel is like water, but when you put it in your mouth, it feels muddy and a little sour. But it has no peculiar smell or taste, and is very easy to drink. It is a very easy to drink sake. Today we had it after dinner, but it will go well with any kind of food. And the taste changes when it's at room temperature, so we'll try it at room temperature next time!

I've been curious about this sake for a long time, but never had the chance to try it, so I finally did. Hyakumoku" was created by Kiku Masamune to show the world the beauty of sake! Is it still limited to Hyogo Prefecture? It's not easy to get, and there are not many shops that carry it. It's not easy to find, and there are only a few shops that carry it. (If they do, it's mostly kept by the regulars.) From the moment you put it in your mouth to the moment it goes down your throat, including the aftertaste, you don't feel any miscellaneous flavors at all. But you can still feel the sweetness and flavor of the elegant rice. Well, it's delicious! This is not a sake to be drunk casually, but to be savored a little at a time. I want to remember this taste!

Today's second drink is Manzaku no Hana. What is the Akita G Club? I thought to myself as I drank it. It was chilled well, and there was a pleasant sound when the bottle was opened. The mouthfeel is light, and it goes in so smoothly that it's hard to believe it's junmai sake. It is refreshing until you swallow it, but when you roll it around on the bottom, you can feel the rice. There is no harshness, and this is also a sake suitable for summer. Akita is delicious, no matter what kind of sake you drink! You can feel that the sake is made with great care and attention to the rice. There are so many brands that you can't drink them all!

It's been a long time since I've posted, and a long time since I've been on a business trip to Akita. It's getting harder to go out at night everywhere I go, but I drank my first Tobiraizumi at an izakaya near my hotel. The mouthfeel was not swooshing, but cooing. It makes you feel that you are drinking sake in a good way. The aftertaste is refreshing, and there is no alcohol feeling, no miscellaneous taste, no bad taste! A true summer sake! It might be a good first drink. It's the perfect sake for hot summer days.

The souvenir of my workmate is Sekai Ichito from Wakayama, which I drink for the first time. It's a junmai ginjo with a milling ratio of 50% and a brand name called "Minakata", which is said to have been borrowed from Minakata Kumagusu. It has a light ginjo aroma, but it packs a punch from the moment you drink it! You can feel it in the back of your throat, like you are drinking sake. There is no miscellaneous flavor, so the aftertaste is clean. However, as time passes after opening the bottle, it gradually becomes soft to drink. There are other brands I like in Wakayama, but it's nice to be exposed to a new brand like this. I don't buy it easily by myself > <

Local sake, sedimentation Masamune "Seven Crowned Horse". I will drink it for the first time in years. 100% Yamada Nishiki Polishing ratio 50%. Actually, I opened the bottle last night, but it was difficult to drink, so I left it all night and tried again. I knew it! It has become rounder and more delicious! It has a faint ginjo aroma and a sweetness like a young banana. It's a little tart in the mouth... it's thick and has a strong presence in the mouth. But because it was chilled well, it has a refreshing dryness to it. It makes you feel that you are drinking sake. And you get drunk (laugh). Today I'm drinking it with persimmon peas, and it washes out the inside of my mouth in a good way. It tastes better if you let it sit in the fridge overnight after opening the bottle, chilling it to a crisp!

I had seen this sake at the shopping center but hadn't had a chance to try it, but after reading your post, I've been curious about it. It's not that I've been avoiding the big brands (breweries), but I haven't had Kikumasamune for a long time, even though it's a local brand. At first I thought I'd get the silver pack, but then I saw the gold pack next to it, so I bought that one. The rice polishing rate is 70%. As everyone has posted, this sake is very fruity and easy to drink. The initial mouthfeel is reminiscent of a green apple, and it's refreshing in a way that you wouldn't expect from a Junmaishu. It is refreshing even after drinking, and there is no sticky feeling at all. It is a very straightforward sake with no peculiarities. At just over 1,000 yen for 1.8 liters, it's a great value! It's so good that I think this is all I need to drink at home. I think this is the only sake I drink at home anymore.

It's been years since I've been to Kochi's Drunken Whale! I found a cute whale on the label and bought it. Although it's a pure rice sake, the rice polishing ratio is 55% and the alcohol content is 15 degrees. It is soft and crisp on the palate, and flows down the throat quickly without tingling on the tongue. But along the way, it leaves a pale fruity taste in your mouth, and after you swallow, you feel the alcohol. And you get pleasantly drunk! Mmm, a drunken whale! Unpretentious, yet not boorish, and a delicious home brew! It's not overly assertive, so it will go well with any dish. I'll leave it overnight and have it with rice tomorrow!

The other of the two sakes we drank last night. It's Kiji Shuzo's Kumo, unfiltered unpasteurized sake (junmai)! The rice is 100% Gohyakumangoku, and the polishing ratio is 65%. The rice and water are all local. We chilled it in the refrigerator and opened the bottle. You can feel the sweetness and flavor of the rice in your mouth. It's a carefully crafted sake with a clean, crisp taste, but with a strong flavor. It's not flashy by any means, but it's good! This is a sake that can be drunk with confidence in everyday clothes. Recommended for drinking at home! It's hard to go back to my hometown, so I'm going home by drinking local sake like this ^ ^.

My favorite sake from Kisugi Shuzo. This time, it is a lightly nigori junmai sake called Sakura. The rice is Gohyakumangoku and the polishing ratio is 70%. Perhaps it was a storage problem, but there was no bubbling sensation when I opened the bottle. First, let's try the top clear water. It is soft and tart, with a hint of sweetness from the rice and a sense of strength. Suppressing the desire to drink it as it is, next we shake it and try it with muddiness. It has a beautiful cloudy color and you can feel the gentle ori in your mouth and enjoy the rice more. In a good way, you can enjoy the usu-nigori in this unadorned junmai-shu. My friend was with me, so we finished it all at once, but I would have liked to try it after letting it sit overnight while chilling in the fridge. It's a delicious sake, one you can feel at home with and enjoy!
