A brand I have yet to try at my favorite Kiji sake brewery.
Hii River Orochi.
This sake is called "natural sake", and of course the brewery, rice, and water are all made locally.
The rice is grown organically and without pesticides, and dried in the sun.
When you open the bottle and put your nose close to it, the aroma reminds you of whiskey.
And the color is amber.
The mouthfeel is strong and sturdy.
However, it is not overpowering and there is no miscellaneous taste.
It is the opposite of the fruity, easy drinking sake that has become popular recently.
It is an interesting drink that can be enjoyed after a meal, just like a whiskey.
I'd like to know more about this particular kind of sake, one that has its own particular characteristics!
