This is the second sake we opened the other day.
This sake, Tamo no Haru Kisan, was created by Gifu brewer Yamada-san in collaboration with Gifu University.
The rice is 100% Hidahomare, and the milling ratio is 55%.
And the yeast is Gifu University Yeast!
When you open the bottle and put your nose close to it, you can smell the fruity aroma.
When you hold it in your mouth, the sweetness of the rice spreads throughout your mouth.
It's like a dessert sake, and the sweetness lingers even after you swallow.
Very different and interesting from the Kyokubi we had the other day!
It's still good enough, but I'm sure the taste will become more refined and it will become a great sake.
I'm looking forward to seeing if it mellows out after two nights of exposure to the air ^^.
