When I visited the Skytree Solamachi, the brewer of Ichinokura came to sell this special sake, and I was allowed to taste it. The green bottles of Suzune that you can find in supermarkets are carbonated afterwards, but this one is fermented and slightly sparkling. Moreover, it is fire-aged and can be served at room temperature, so I had it while I was on the road.
It's not so much slightly fizzy as it is fizzy, with a citrusy and sour taste reminiscent of lemon and a very refreshing aftertaste. 9% is very easy to drink. It is delicious! This is the kind of encounter I'm looking for.
