Weak grapefruit type aroma and acidity. It has a strong sake quality, yet it has a light and refreshing taste, which is very strange. The umami is not strong when you drink it, but it leaves a strange aftertaste that lingers for a while. It is a unique sake that is beyond my imagination.

Thank you for drinking Aizu, Kunigon and Hanazumi, the sake brewery in my hometown of Minamiaizu-cho!

I happened to find this at a local Chamber of Commerce event at the brewery. The price was 1,980 yen for a bottle! I didn't hesitate to buy it because of the unbeatable price.
The sweetness and acidity are well balanced and there is a good amount of fruity aroma. I will definitely buy it again next year if it is available.

When you put it in your mouth, you first feel the acidity and gas. Then, the rich and heavy umami is felt three-dimensionally in combination with the gaseous and raw flavors. The alcohol content is 16%, but it feels a little strong. The lingering aftertaste of umami lasts for a long time.

I was told that this sake is only brewed in years when the rice is soft. I bought it because it was interesting.
When I drank it, it was quite light, maybe the lightest sake I have ever had. It is light and has a clean aftertaste with no lingering aftertaste. There is acidity and umami in it. There is a sense of gas. In a word, it gives the impression of slightly carbonated water made from rice.

Unlike regular Setsugetsuka, this is a single-bottle fire-brewed sake, and according to the owner of the store, it is "Shin Setsugetsuka". I have never had regular Setsugetsuka, but I was curious to buy it.
When I drank it, I could taste the umami and there was acidity, but the umami lingered in the aftertaste. The texture is delicate. It has a mild aroma of grain.
