When you drink it, you can taste the sweetness and acidity very well. The sweetness in particular lingers in the aftertaste. It has a soft texture and is very pleasant on the palate. Posting No. 408. I was told that this sake is brewed with non-standard rice and although it is junmai, it cannot be called junmai sake. I heard that it is a limited edition sake available only in about 10 stores in Japan, so I immediately bought it. When I drank it, I found it to have a strong acidity and an unexpressible umami taste of rice. The umami lingers in the aftertaste. There is no sweetness. Perhaps because it is a Yamahai sake, it has a somewhat strong flavor. It has a strong personality and is very tasty. Posting No. 407. This is a new sake rice called Hyakumangoku No Shiro. The label says it is a clear tasting rice with low protein content. When I drink it, I can taste the umami but it is also light. Posting No. 405 I bought this sake with interest because it was produced by Amatsu Kimura. They use black malted rice. When I drank it, it tasted sweet and sour. It tastes sweet and sour.
