Unlike regular Setsugetsuka, this is a single-bottle fire-brewed sake, and according to the owner of the store, it is "Shin Setsugetsuka". I have never had regular Setsugetsuka, but I was curious to buy it.
When I drank it, I could taste the umami and there was acidity, but the umami lingered in the aftertaste. The texture is delicate. It has a mild aroma of grain.
