This sake is brewed with banana yeast. It is sweet and sour to drink. The texture is light. The aftertaste does not last. It has a strange and unique taste, and I thought for a while what it tasted like, but I thought it was similar to the taste of Weizen beer. I thought it was similar to the taste of Weizen beer. It has an acidic and umami taste and a slightly hard texture. There is a significant bitterness in the aftertaste.
The label says it is made with "shagin milled rice", but I couldn't understand what that means.

I was interested in purchasing this sake because of its use of brewer's yeast. I imagined it to be a somewhat wild sake, but when I drank it, I found it to be weak, light, fruity and easy to drink with a good mouthfeel, the exact opposite of what I expected from a layman. It went very well with the atte.

I was intrigued to buy this because it was described as a Yamahai with a flavor that reminded me of strawberries. When I drank it, I found that the sweetness was not as strong as I had imagined and the aroma was not so spectacular. It goes well with food, but I think it is best to drink it before a meal.

This is from the brewery that makes Hachisen, but I always buy only Hachisen, so this time I bought Mutsu Otokoyama.
My impression is that it has a firm, hard feel. The grain aroma is weak, there is no sweetness, and the aftertaste is not very long. However, it goes well with aji (rice wine).

They have a limited edition sake that is a blend of 4 suminokoretsu. It seems that the percentage of sake rice is different every year, this year it is 20% Yamadanishiki, 26% Hachitanishiki, 22% Gin-no-Iroha, and 32% Omachi.
When we drank it, the grain aroma was weak and the umami flavor seeped in gradually. It is a calm sake with little lingering aftertaste.

The acidity comes first in the mouth, then the umami. It is called "dry" and is stronger than its alcohol content (16%). The aftertaste is not so much umami, but rather a spicy taste.

This is a new sake made with Ginga from Iwate Prefecture. When you drink it, you can feel the gasiness, acidity and umami well. On the first day after opening, the sweetness was not so much, but it increased on the second day, leaving a well-balanced aftertaste of umami and sweetness. It is a wonderfully made sake with a different taste from sweet and sour.

This is the new sake I buy every year. When this sake is released, I feel that this year's new sake has finally started.
I drank it right away and found that this year's sake is made with less sweetness than usual and more umami and miscellaneous flavors. The acidity seems to have been offset by the other flavors.
Also, the price was less than 3,000 yen per bottle including tax until last year, but this year the price was raised to 3,190 yen including tax.
