Post #544. The first day I opened it, the sweetness and aroma were weak and disappointing. On the second day, the sake quality settled down and the sweetness increased. The balance with the acidity is very good and exquisite. The sake has a beautiful quality with little miscellaneous flavors. Posting No. 543. This is one of my favorite sake. I bought a bottle of new sake raw this year. The first day I opened it, I had the impression of a hard feel. On the second day, the sake quality seemed to have settled down, it was softer and had a good balance of acidity and sweetness. Posting No. 542. This is the first limited edition sake sold in two years. I am happy to be able to purchase it this time because it is one of the sake I always want to buy when it is available. The first day I opened it, I thought the sweetness was weak and out of balance with the acidity. On the second day, the sweetness seemed to increase and the sake was very well balanced and tasted as delicious as usual. Post No. 541. The new AKABU sake is now available, which I look forward to every year. It is priced at 3,410 yen for one square bottle only, but of course I bought it. When I drank it, I found a wonderful balance of acidity and sweetness typical of Akabu. This year's theme seems to be "sharper sharpness," and it is true that it is not harsh and does not have a long aftertaste. It is a very tasty sake this year as well. On the second day, the sweetness increased and the balance with the umami became very good, and it became a very delicious sake completely different from the first day. Posting No. 540 This is my second purchase. This company started brewing sake at an old elementary school in Shiwa Town, Iwate Prefecture some years ago. The town's Tsukinowa Sake Brewery is cooperating with them. This sake has a very strong sweet taste. It has acidity and a soft mouthfeel. It is so sweet that it leaves a sweet aftertaste. Posting No. 535. This is a limited edition sake with an alcohol content of 16%, no filtration, and undisclosed specs other than Junmai. It was released again this year and I was able to purchase it. When I drank it, it had a juicy, raw taste, with a hint of acidity and sweetness, but not strong. The aroma is gorgeous, as is typical of the Machida sake brewery. We enjoyed it again this year. Posting No. 528 This is a limited edition sake from a liquor store in Yokote city, made from a rice called Gin no Sei. It has a very strong sweetness when you drink it. It also has acidity, but it is not sweet and sour, it has a very good balance. However, what I think is great about this sake is that the sweetness disappears in the aftertaste and the bitterness remains. It is unique and I love it.
