I heard that this is a limited edition sake that hasn't been in stock for a while, and I bought it because it was interesting. It is a Junmai Daiginjo, a blend of Arabashiri and Yame.
It has a very good balance of acidity, sweetness and umami. There is a moderate amount of fruity aroma. The aftertaste is not very long.
It tastes better on the second day after opening.
Pairing with Ate
Braised beef tendon ◯++.
Baked sausage
Fried chicken
