Kinjaku is served with shellfish sashimi and sushi. It is a good sake with a strong aroma even though it is cold, and a pleasant acidity spreads in the mouth. As the meal progresses, the acidity begins to bother me, so I thought it would be better to drink it as an aperitif.

Hiokizakura is served with seared local octopus. This sake has a subtle aroma and a strong flavor. I remembered that it was recommended to me in Shimonoseki as a sake that goes well with smoked fugu (blowfish). It went well with the seared octopus.

I had never seen this brand before, so I bought it and had it with vinegared mackerel. It was the first sake I had had in a while, and it was quite dry, but after drinking it for a while and getting used to it, the umami flavor spread to the palate nicely. It seems to go well with sashimi rather than vinegared mackerel.

I had it with cold sake, but the flavor of the junmai sake and the bitterness and savory taste of the kibinago served afterward were irresistible. I couldn't resist having another glass. The aroma is muted because it is cold sake, but the umami and acidity in the mouth increase one's appetite.
