This is the first bottle brewed with Yamadanishiki by brewing forest. The sweetness and acidity stand out, and the typicality of KAISUMORI is still present. A slight bitterness can be felt in the aftertaste, and it is in perfect balance with the sweetness. It would go well with cream cheese.

Kamo Kanehide's Kijoshu was given to us by a customer. The sweetness of the kijoshu was well balanced with the excellent sharpness that is typical of Kamo Kinshu. It was a very high perfection kijoshu.

FIRAND Yumei Sake This sake was given to me by a customer at Sake Street Asakusabashi. It tasted just like a kijo sake. It is a sake that can be enjoyed in large gulps. The alcohol content is 9 degrees. It is a perfect dessert sake with an alcohol content of -70. This is a sake that women and those who do not like sake will like.

Nitoshi Junmai Ginjo Light Nigori Sparkling Nama The aroma is gorgeous and sweet, but the taste is surprisingly dry. This is a bottle that truly lives up to the Ni-Utsuri name. The fizzy sensation is pleasant and as refreshing as drinking beer in the summer. The label is cute, too, and it's outstandingly delicious!

Kangiku Ocean99 Hoshikai Junmai Daiginjo Compared to Aomi, which is also a summer sake, it has a more subdued taste. The pure flavor of rice can be felt gradually in this bottle. It has the typical Kangiku taste, but it may be a little lacking....

Shichirouman Junmai Ginjyo, single shot hi-ire A bottle with a pronounced sweetness derived from the four-stage glutinous rice brewing process. It has a mild mouthfeel and gentle flavor that makes it easy to drink. Delicious.

The red wine is juicier than True White because it is more reddish. The fruitiness is like seasonal strawberries. It also has a slightly effervescent and energetic impression. It finishes with a bitter taste. If you want a more subdued taste, go for White. If you want more freshness, we recommend Red.

This bottle seems to bring out all that is good about Omachi rice. Lychee-like fruitiness. The alcohol that escapes through the nose is pleasant. Not only the sweetness and umami, but even the astringency is lovely. This is a sake I look forward to every May.

Daimine 3 Grain Summer Jun Kasumi Sake Yamadanishiki A sense of muscateliness that surges out of the bottle. Although the alcohol content is low at 14.5, it is slightly cloudy and the flavor of Yamadanishiki can be felt. Seriously, it is the ultimate in refreshing and fruity, perfect for summer and easy to drink. You will finish it in no time....

Amami Akaban Omachi Junmai Daiginjo A little excited to buy this. It has a beautiful flavor that is typical of Amami, while giving a sense of the richness of Omachi. While it has a firm sweetness, it is not too sweet, so it is not too harsh, and can be drunk in a relaxed manner. It seems to go well with all kinds of food. It has a high degree of perfection.

Kangiku Junmai Daiginjo Beyond C Unfiltered Nama When drunk cold, it is moderately sweet with a hint of bitterness and acidity. As it neared room temperature, it became sweeter and easier to drink. The minerality of the Kangiku character was still present.

Eikofuji Morinokuma-san Junmai Daiginjo ORIGARUMI Unfiltered Nama-shu Eikoufuji's sake made from "Morinokuma-san", Kumamoto Prefecture's rice rice. It is very sweet and has excellent sharpness. My favorite type of sake. It was hard to keep it down so as not to drink too much, and it ran out in 3 days...
