Takeyu Yamadanishiki Ogawa Yeast Special Honjozo The Takeyuu I drank before was too refreshing and not enough, but this one has a very modern (sweet) taste. Is it the influence of the Ogawa yeast? However, it is not too sweet, so it can be enjoyed as a mealtime sake or on its own.

Classic SENKYO Mukaku Unfinished Unfiltered Nama Sake I tried again to know the quality of SENKYO. I still didn't like SENKYO... I wondered if the classic unadulterated sake was not suitable for me...? I don't like sake with a traditional yeast yeast yeast in the first place. Next time, I will try modern mukashi.

Harada Junmai Daiginjo Isehikari Mild and elegant sweetness. It has a gorgeous flavor with a clean finish that will keep you coming back for more. Yamaguchi has a lot of beautiful sake.

Yamamoto Strawberry Red Junmai Ginjyo Nama-no-Genshu Sake brewed with white malted rice used mainly for shochu. It has a strong acidity due to citric acidity. The sweetness is subdued and the acidity lingers in the aftertaste, which is not my personal favorite. If you like Senkou, you may like this type.

Muso Gensetsu Junmai Ginjyo Nama-Genshu This sake is supposed to be dry, but it has a high degree of perfection without making you feel it. It has an excellent balance of sweetness, acidity, and sharpness. This is a bottle for people like myself who like modern sake and shy away from dry sake. It will surely change your image of dry sake.

Daishinshu Code-breaking Junmai Daiginjyo Nama-zume The sweetness of the rice is firm and gentle, which is not typical of Daishinshu. It truly breaks the rules.... It also has a crisp aftertaste of Daishinshu. It was so delicious that we purchased it from a tasting at the Kakinuma Sake Shop Kitasenju. A must-try for modern sake lovers.

KAISUMORI Daiginjo At the KAISUMORI Bar in Tokamachi City, Niigata Prefecture. I had seen junmai daiginjo and junmai ginjo before, but we were served daiginjo at a French dinner. The Daiginjos are not typical of Kakusumori and are more of a light, umami-guchi type to be drunk with a meal. It was smooth and tasty, but I personally prefer junmai ginjo and junmai daiginjo because of their sweetness. However, I drank too much of it because the sake was so good that I couldn't remember what it was... (laughs).

Seiatsurai Maikaze 60 Special Junmai Namaishu A bottle of sake that is concentrated with the sweetness and umami of refined rice. Yet, it has an excellent sharpness. I felt the same thing with this sake as I did with Jyushiyo. I feel that the recent Sei is getting tastier and tastier....

Sanuki Kuraudei Calpis soda for adults. It has an alcohol content of 6 degrees and a sake content of -70, so it is quite sweet. Recommended for those who don't like sake, first-time drinkers, and women. I heard it tastes different when warmed up, so next time I will try it warmed up.

Amami Junmai Ginjyo Light Nigori Nama-zake Winter-only "Momoten" a.k.a. "Momoten". It has a fresh light nigori taste with a gentle sweetness typical of Tenbi. It has a slightly bitter aftertaste, which is not my favorite among the three types we compared, but Tenbi is consistently delicious and cost-effective. We had it with apple pork roll fritters. Purchased at sake street Asakusabashi.

Togakushi Junmai Ginjyo Nama Zume (1st) It is quite refreshing and seems to go well with sashimi. It's a little short for me, but it's hard to find in Tokyo and the cosmetics are great (under 1500 yen for 720ml). Togakushi Junmai Ginjo (2nd page) This sake has a sweeter taste than "Togakushi Junmai Ginjo Namazume" and is my favorite (modern) sake. Probably because it is fresh and juicy due to the fact that it is not fire-aged.

Shirakiku Black Label This Kyoto sake is made with Koshihikari rice and black malted rice. Black koji is said to contain citric acid, but the acidity is not strong, and the sweetness of the Koshihikari rice is maximized by the black koji in this superb bottle. Personally, it is the most shocking sake of 2022 and one of the top tasting.
