I didn't go to the "Dawn of the Young" that was being held,
IYASAKA SAKE BREWERY, an up-and-coming craft sake brewery 🍶.
The brewery is licensed to brew other alcoholic beverages, but has yet to obtain a license to produce its own brewery. The second edition of Phantom Craft Sake, brewed using equipment from Abe Brewery (Abe), where the brewer was trained. ✌️
I was going to let it sit for a long time, but the desire to drink it got the better of me and I opened the bottle 😊.
Naturally, this one is brewed only with rice malt, as it has to be outside the sake production regulations: ‼️
The aroma is a mix of brown rice smokiness, lactic acidity, and citrus aroma, which is typical of 100% rice malt, but it is refreshing. The taste is also very tasty with a good balance of strong sourness, juicy citrus grenfre, complex taste of rice malt, and bitterness on the back end 😋😋😋😋.
I want to repeat it like drinking Tsuchida or Nirvana Kame, but I don't think they sell it anymore.
