After a long absence, we went to Koyama Shoten. As I was happily browsing around the store, I noticed an unfamiliar font of TAMITSU. This is a Tamitsu from Mie Prefecture that I encountered at Yotsugi Sugiura Sake Shop a long time ago. This one is Koyama Shoten's special order, with a little bit of the oli (rice gels) submerged in the glass. Small air bubbles arrive in the glass, but I don't feel any carbonation. It has a nice aroma of apples and pears, and a soft sweetness that I like. The bitter aftertaste finishes off the palate, making the next sip more enjoyable. A delicious sake that can be drunk on its own.
