This is a fire-aged special junmai sake from the Shikano Shuzo brewery in Kaga, Ishikawa Prefecture. It has a good balance of umami and bitterness, and is perfect as a food sake, as it seems to go with everything. Try it heated as well.

Sake from Terada Honke, Katori-gun, Chiba Prefecture, a leak-free, filtered, unadulterated, raw sake, Autumn Agari. Brewed with locally grown sake rice with no pesticides or chemical fertilizers, it was a unique sake with a sour, mellow sweet and savory taste.

At a certain supermarket, an 1800 ml bottle was on sale for 2200 yen, so I had to buy it. The rice used for the sake was Ginotome from Ninohe, the brewery's hometown. It tasted sweet in the mouth, but had a mellow, dry taste. It was a delicious food sake.

Nagataki Sake Brewery is located in Hiroyo-machi, Nara Prefecture. Recently, the brewery has also been producing local beer, which is freshly brewed and available at the Nagataki Brew Park next to the brewery. This hiyaoroshi has a mellow, but not too rich, flavor, and is a bit dry at the end.

I received this sake from Nagai Sake Brewery in Kawaba Village, Gunma Prefecture, as a gift. It brought back fond memories of my visits to the Kawaba ski resort many years ago. It was a basic dry sake with an elegant rice flavor at the beginning and a spiciness that came gradually.

Purchased at the Hankyu Sake Brewery Festival. It is a sake made by the Miyako Nishiki Sake Brewery in Gotsu City, Shimane Prefecture, which was once closed but was revived after 2022. The rice is rice rice Tsuyahime (grown in Shimane Prefecture with reduced use of agricultural chemicals), a very special kind of sake. It was an easy-drinking sake with fresh acidity and sweet-spicy flavor typical of nama-shu.

Takezumi is brewed by Tajime Sake Brewery in Asago City, Hyogo Prefecture. Sachi no Tori is made from rice grown without pesticides by the Stork Breeding Agricultural Method. My brother who lives in Chiba gave this to me. It is a very strong and thick beer with an alcohol content of 19 degrees. If you want to drink it in the middle of summer, you should drink it in an air-conditioned room. It is even better with strong flavored food.

I found this at Yamaya. It is made by Kobori Sake Brewery, which brews Manzairaku, but there was no information about it when I looked for it on the Internet. I wondered if it was a Yamaya original. It was fresh, sweet, flavorful, and a little gaseous, refreshing, and delicious.

Shinomine by Nara's Chiyo Shuzo is well known, but this Kushira is brewed only with Yamadanishiki, which is grown in-house without pesticides. 80% polished rice gives it a slightly dry taste with plenty of rice flavor, and while Shinomine is delicious, this sake has a different taste.

Sake from Yamaguchi Prefecture, purchased at Yamaya. It seems to be a sake brewed with rice called "Koriyako," which has been revived in Yamaguchi Prefecture in recent years. The sake had a rich, mellow, deliciously sweet taste with an acidity that was typical of Yamahai sake.

Purchased at the Hankyu Department Store's Traveling SAKE, Tochigi Prefecture event. It was a bit more sparkling than I had expected, like sparkling sake. The taste is crisp and dry, which is good for this time of year when the weather is getting warmer.

Sake from the Eigashima Brewery, famous for its Akashi Whiskey in Akashi City, Hyogo Prefecture. It is brewed using the mizu-hashiroshi brewing method from the Muromachi period (1333-1573). The color of the sake is a bright golden yellow, and the taste is quite unique, with a strong acidity and a delicious sweetness. It is perfect with simmered dishes and other darkly seasoned dishes.
