Purchased at the Hankyu Sake Brewery Festival. It is a sake made by the Miyako Nishiki Sake Brewery in Gotsu City, Shimane Prefecture, which was once closed but was revived after 2022. The rice is rice rice Tsuyahime (grown in Shimane Prefecture with reduced use of agricultural chemicals), a very special kind of sake. It was an easy-drinking sake with fresh acidity and sweet-spicy flavor typical of nama-shu.

I bought a bottle of Okura summer sake because there was some left at the liquor store. I thought it would be crisp and dry since it was a summer sake, but it was not. It had a strong sweetness and umami flavor.

Takezumi is brewed by Tajime Sake Brewery in Asago City, Hyogo Prefecture. Sachi no Tori is made from rice grown without pesticides by the Stork Breeding Agricultural Method. My brother who lives in Chiba gave this to me. It is a very strong and thick beer with an alcohol content of 19 degrees. If you want to drink it in the middle of summer, you should drink it in an air-conditioned room. It is even better with strong flavored food.

I found this at Yamaya. It is made by Kobori Sake Brewery, which brews Manzairaku, but there was no information about it when I looked for it on the Internet. I wondered if it was a Yamaya original. It was fresh, sweet, flavorful, and a little gaseous, refreshing, and delicious.

Shinomine by Nara's Chiyo Shuzo is well known, but this Kushira is brewed only with Yamadanishiki, which is grown in-house without pesticides. 80% polished rice gives it a slightly dry taste with plenty of rice flavor, and while Shinomine is delicious, this sake has a different taste.

Sake from Yamaguchi Prefecture, purchased at Yamaya. It seems to be a sake brewed with rice called "Koriyako," which has been revived in Yamaguchi Prefecture in recent years. The sake had a rich, mellow, deliciously sweet taste with an acidity that was typical of Yamahai sake.

Purchased at the Hankyu Department Store's Traveling SAKE, Tochigi Prefecture event. It was a bit more sparkling than I had expected, like sparkling sake. The taste is crisp and dry, which is good for this time of year when the weather is getting warmer.

Sake from the Eigashima Brewery, famous for its Akashi Whiskey in Akashi City, Hyogo Prefecture. It is brewed using the mizu-hashiroshi brewing method from the Muromachi period (1333-1573). The color of the sake is a bright golden yellow, and the taste is quite unique, with a strong acidity and a delicious sweetness. It is perfect with simmered dishes and other darkly seasoned dishes.

I received this sake from Kurume City, Fukuoka Prefecture, as a souvenir. 17 means that the alcohol content is 17 degrees or higher to bring out the best flavor. It was a perfect sake for a meal with a strong umami flavor.

Purchased on a return trip to Hiroshima by taking the Kure Line to a sake brewery in Akitsu; the brewery has recovered from the damage caused by the torrential rains in western Japan in 2018. You don't see it very often outside of Hiroshima. Delicious with a fresh acidity and well-balanced flavor and spiciness typical of nama-shu.

Purchased at a commercial supermarket, a bottle costs just over 1,800 yen. This sake is made by a small sake brewery in Ikoma City, Nara Prefecture. It has a refreshing taste and goes well with any meal. On its own, the sake may be a little lacking. When heated, its acidity and spiciness stand out. It is easier to drink cold and tastes better.

Sake from Fujii Shuzo, Hiroshima, purchased at a tasting and sale at the TSUTAYA appliance liquor store in front of Hiroshima Station when returning home. It is an unfiltered, unpasteurized sake made with a special attention to the use of the traditional sake yeast and no yeast added. It was fresh at first, with a firm sweetness and umami, followed by a considerable spiciness. It was a very flavorful sake.

Purchased at a sake brewery near my parents' home in Kabe, Hiroshima City. I have been drinking Kyokuho for a long time, but this is my first time drinking Taihei. It has an excellent balance of fresh sweet and umami, spiciness, and bitterness. My favorite flavor, delicious. I will buy it again when I go back to my parents' house.

I bought this at the Fukushima Osaka office. I bought it because I have not seen many of them in Kansai. It was the first pressing of the year. It is fresh, crisp, deliciously dry, and when the temperature rises, the sweetness becomes a little stronger. Fukushima sake is delicious.
