It was delicious.
It is a junmai daiginjo-style sake with no malted rice smell or other miscellaneous tastes, and the sweetness and umami of the rice can be felt straight away, with a beautiful aftertaste. After the second day after the bottle is opened, it starts to have a sourness and other tartness, and it becomes more like a mellow sake, but it was delicious to drink immediately after the bottle was opened in the cold of snow.
⭐️⭐️⭐️⭐️⭐️
Purchased at a store attached to Aquas in Shimane. I was worried about the Yasaka Senjin Yamahai and finally bought a bottle, but I am very satisfied with it.
Miyako Nishiki Shuzo
Nishiki Koukutuba Junmai Sake
This brewery is located in Gotsu City, Shimane Prefecture.
The rice is polished to 60% Shimane rice.
Sweet and full-bodied aroma, rich rice flavor, and deep flavor with a sense of maturity.

#Nihon-shu
dry and harsh with a hint of quirkiness
Slight aroma, soft attack. The taste is dry with a habitual character. It goes in smoothly and has a good sharpness.
It is a very sharp sake, but not too far off the mark.
a little dry (taste, etc.)
Slight aroma, sharp attack. The taste is a little dry. It goes in smoothly and has a good sharpness.
It is a sake that can be served with any accompaniment.
Purchased at the Hankyu Sake Brewery Festival. It is a sake made by the Miyako Nishiki Sake Brewery in Gotsu City, Shimane Prefecture, which was once closed but was revived after 2022. The rice is rice rice Tsuyahime (grown in Shimane Prefecture with reduced use of agricultural chemicals), a very special kind of sake. It was an easy-drinking sake with fresh acidity and sweet-spicy flavor typical of nama-shu.
Left: Miyako Nishiki, soft and delicious
Sweet aroma, soft attack. It has a full-bodied umakuchi taste. It goes in smoothly and has a light aftertaste.
When paired with the accompanying Surumeika roll, the squid flavor is enhanced.
Purchased at the Hankyu Brewery Festival. The one that made a good impression at the tasting. It was gorgeous, a little gassy, and had a dense sweet flavor. I thought it was not very Shimane-like.
Recommended for those who like fruity, sweet, delicious, and juicy types.
The seventh brewery in the Hankyu Brewery Festival 2023.
Miyako Nishiki", Miyako Nishiki Sake Brewery, Shimane Prefecture
A group of breweries in the San'in region.
Three San'in breweries were here before at the Japanese Sake Festival, but this was the first time I saw them.
Noukouzake 88
Unexplored region: Yakae Yakae 2021 Nama-nazake
Unexplored region, Oku-Shimane, Yayaka 2022 Nama-nazake.
This was the least polished low-polishing sake, which was a bit surprising.
But I was not impressed by its normal quality for a low-polished sake.
I had checked the "Noukouzake 50," which won the highest gold medal in the premium junmai category of the "Wine Glass Delicious Sake 2021" competition, but forgot to drink it 💦.
The "Yakasaka" was a comparison. The variety is the same, the rice harvested in different years (harvested in 2009 and 2010), and the brewing year is the same.
I don't remember which one I liked better, but I realize that such factors have quite an impact on the difference in taste.
Hankyu Brewery Festival (3)
I was interested in this festival in the past, but there were so many people that I passed it up 🙄.
I'm glad that I can go with Nemuchi-san 😊.
It seems that the brewery has come back to life after a long dormancy.
According to Nemuchi's information, it seems to be a group of "Sanin no Kura", but Sanin no Kura has two websites, the older one is listed but not the current site which is compatible with smartphones🤔.
I guess they must be affiliated with Miyako Nishiki because their individual official websites have similar layouts.
The old site seems to have stopped being updated around 2012, but I didn't realize they were grouped together that long ago 😳.
It also lists the breweries that are now out of business.
I wonder if they have been part of a brewery alliance for a long time, but recently, the parent company's intention to emphasize branding has come to the forefront.
I tasted
Noukouzake sign88
Kinjyu Dark Maple Junmai Daiginjyo Nama-no-Hara Sake
Unexplored Oku-Shimane Yaoei 2021 Nama-Nagara Sake
Unexplored Oku-Shimane Yaoei 2022 Nama-Nagara Sake
Nokkozake sign88 has a strong rice flavor and is very drinkable.
The Haikyo Oku-Shimane is made from different rice varieties in different years. I heard they made them differently.
Both are sweet and delicious, but 2022 was sweeter and more to my liking.
I bought the Junmai Daiginjo Nama Sake that gave me the best impression.
The rice polishing ratio is 88%, which means that the sake has not been cut down too much. The 88% rice polishing ratio gives the sake an interesting taste with a lot of miscellaneous flavors. It is not a bad sake, but it may not be for everyone.
Miyako Nishiki Sake Brewery in Gotsu City, Shimane Prefecture. The brewery had been closed for several years due to aging toji (master brewer) and lack of manpower, but made a complete re-start in May 2028. It is one of the hottest sake breweries in Shimane Prefecture these days, having won the highest gold award🥇 at the "Delicious Sake in a Wineglass Award 2021.
On the left is the Izumo of Kok
Aroma: Fruity, soft attack. The taste is firm and umami. It goes in smoothly and has a full-bodied aftertaste.
It has a full-bodied, umami mouthfeel.
A photo of junmai sake from the Miyako Nishiki Sake Brewery, the only sake brewery in Gotsu City, Shimane Prefecture, drunk at a hotel in Gotsu🍶The sake is so easy to drink that it naturally goes well with local cuisine from the San-in region.
