Polishing is not always a good thing. It is not good if it is polished. It has a deep umami, a little acidity, and a long-lasting aftertaste that only a sake brewed with a yeast called "nama yeast" can produce. It is delicious. The brewer's yeast is the one and only. You have to drink it to understand it. It makes me want to drink more and more Niida sake.
