CorisSake made from ancient red rice.
It was researched as a graduation thesis at Tokyo University of Agriculture, but was never fully completed, so it was handed down to a junior colleague to be made.
It is more along the lines of plum wine than sake.
It becomes mellow when heated.
The best taste is probably with soda.
