The 14th sake brewery in Gifu Prefecture. Wakaba K.K.'s main brand in Mizunami City. We bought a 300ml bottle at the brewery. The cat in the photo is the warehouse owner's cat, and there was even an anthropomorphic illustration of it. There seems to be another cat, but we were unable to meet it. The aroma is refreshing, characteristic of sake. It has a dry, light, acidic taste with a sweet aftertaste.

This is the 12th sake brewery in Gifu Prefecture. This is one of the main brands of Hirata Sake Brewery, one of the seven sake breweries in Takayama City. It was purchased at the brewery during the Hida-Takayama Sake Brewery Nonbei Festival. The aroma is subdued, and the sourness and dryness come first in the mouth, but the sweetness starts to come out after drinking. It is the type of sake to enjoy the aftertaste rather than the mouthfeel.

The Junmai Daiginjo was also opened. The color is subdued, but the aroma is thicker and sweeter than that of Junmai-Daiginjo. In the mouth, the sweetness of the rice was stronger than the acidity, and the sweetness spread even though the sake was dry, probably because it was also a nama-shu. I had the luxury of comparing three bottles of the same brand, but when you can see such a difference even in the same brand, you can understand the depth of junmai sake.

I bought it from a roadside station or a supermarket where it was sold in a single-bottle. The brewery only had a four-unit bottle. I drank it after drinking the special junmai. The color is darker than the Junmai, and the smell is a little stronger. The sweetness in the acidity has increased, making it even easier to drink.

We purchased this sake at the brewery during the Hida-Takayama Nobei Matsuri (Sake Festival). We purchased Junmai and Junmai Daiginjo, and Junmai Ginjo later at a roadside station. When you put it in your mouth, you will feel a sweetness similar to melon after the sourness.

The 10th sake brewery in Gifu Prefecture. Hara Shuzo's main brand is located in Gujo City. It can be purchased at supermarkets and liquor stores in Gujo City. Located in Shiratori, Gujo, this is a rare sake brewery in Japan that brews all of its sake with flower yeast. The color is slightly amber. The aroma is subdued, but in the mouth you can taste the refreshing acidity and flavor of the sake. It can be served cold or warmed.

It is very easy to drink because of its lightness and sweetness. I visited the brewery recently. I would like to try Junmai Daiginjo in the near future.

This is the 8th sake brewery in Gifu Prefecture. When I went for a drive to Nakatsugawa, I bought this sake at a roadside station in Kashimo because of its cute label. The aroma was not noticeable, but when you put it in your mouth, it was dry as the name implies.

A bottle of Shinshu's local sake drinking set. I bought it at an Aeon store in Kiso when I went for a drive to Kaida Kogen. The aroma is weak and the taste is dry and light. The aroma is weak, and it is dry and light. It's a dry, light type of sake, drinkable in general. I would rather drink it warmed than chilled. I am considering buying Junmai sake at a sake brewery in Ookwa village next time.

Purchased at a roadside station in Toyama Prefecture. Polishing ratio 35%. The sake brewery's attention to rice polishing can be felt in this product. The aroma is fruity, but subdued. The taste is clean and dry. The sweetness of the rice spreads in the mouth, making it easy to drink. The unique shape of the containers other than the one-sum bottle makes it slightly awkward to store, but that should be called a charm.

The seventh sake brewery in Gifu Prefecture. Hirano Brewery's main brand in Yamato-cho, Gujo City. Purchased at a roadside station in Gujo Yamato. It can be found at most liquor stores and restaurants in Gujo City. The aroma is apple-like. It has a strong sweetness and is easy to drink.

The fifth sake brewery in Gifu Prefecture. Miwa Sake Brewery's main brand in Ogaki City. Purchased at a supermarket in Takayama city. The name is Shirakawa-go, but the brewery is located in Ogaki City😅. It is a good combination of doburoku and amazake. I have drunk doburoku from Shirakawa-go before, and I can tell you that the sweetness spreads after the sourness, so it is easy to drink, but it is also easy to get drunk.
