Today is sake day. This time it is Tsushimaya, one of the main brands of Miyozakura Brewery in Minokamo City. It is a limited distribution brand, so it can only be purchased at special dealers. It is made from Yamadanishiki with a 48% polishing ratio. Purchased at a distributor in Kani City. The nose has a fresh apple-like ginjo aroma. It has a sweet and refreshing flavor on the palate. The taste is sweet and refreshing on the palate. Junmai Daiginjo-namaishu is really great.

Next was a junmai sake from Kuromatsu Hakusen. The aroma is weak. A faint apple-like ginjo aroma? The first impression on the palate is sourness, umami, and sweetness, in that order. The sweetness becomes stronger when drunk with spicy food, so it seems to go well with such food.

We also had a bottle of Heiwananishiki Shuzo's main brand, Kaneizumi Junmai Ginjo. This was also purchased directly from the brewery. This is an aged Shiboritate made with Yamadanishiki. The aroma has a banana-like ginjo aroma. There is no acidity, and the spread of sweetness and umami is even deeper than that of the special junmai.

One of the main brands of Heiwananishiki Brewery in Kawabe-cho, Kamo-gun. Purchased at the brewery. Aged Shiboritate made from Gohyakumangoku sake rice. The nose has a fruity, acidic ginjo aroma. The sweetness and umami spread from the palate, making it very easy to drink. However, the alcohol content is a little strong (17-18%), so it may be easy to get drunk.

Purchased at Aeon Liquor Shop in Kakamigahara. I bought it because I was interested in the Junmai Daiginjyo single can, which also has a Fist of the North Star label 😅. The aroma is lychee-like. It has a good balance of acidity, sweetness, and umami. It has a lingering aftertaste and is a tasty brew that will soak into your stomach. Downing this one with one fingertip may be an exaggeration, but it packs a punch. After finishing the drink, you may find yourself saying, "What the heck! or "Abesh!" and go down on the bed? In the meantime, I finished my drink. HIDEHITSU!

The aroma is a fruity ginjo aroma. The mouthfeel is sour with a hint of umami and sweetness. It is easy to drink and the umami flavor lingers until the end.

There is no acidity, and the sweetness lasts for a long time. It is still refreshing and easy to drink. It has a long lingering aftertaste.

Misogi Hagi, the first old sake experience. Purchased at a roadside station in Kiyomi, Takayama City, it is a 17-year-old aged sake. The aroma is a mellow ginjo aroma that has been aged for many years. The color is a darker, bright yellowish-brown. The mouthfeel is like a dark matured taste. It smells like the initial fermentation of grass from livestock farms. It has a strong aroma of brewing. It has a strong habit, but if you gain experience, you may understand the taste. Everything is an experience.

The 32nd sake brewery in Gifu Prefecture. This is the main brand of Hakusen Shuzo located in Kawabe-cho, Kamo-gun, Gifu Prefecture. The Junmai and Honjozo sake are available at the brewery. It is also sold at the JA agricultural products direct sales store "Torretta Hiroba" in Seki City. It won the "SAKE COMPETITION" in the junmai ginjo category last year and this year for two consecutive years (4th place in the category last year, SILVER this year). The aroma has a banana-like ginjo aroma. The acidity is moderate and the sweetness and umami are well developed. The reason why it is not well-known is that it is not well-known because its main products are mirin (sweet sake) and shochu (distilled spirit). Among Misogi-Hagi, it is one of the top recommended ones in Gifu Prefecture. Hakusen Shuzo is a mirin brewery that has been around since the late Edo period and started brewing sake after the end of the Sino-Japanese War. The aged mirin "Fukuraijun" sold here is said to be well received by Japanese food chefs. It is also famous as a drinkable mirin. There are many variations of shochu liqueur such as "Hanamikura" (shochu liqueur made from sake lees), "Yanagikage" (rice shochu liqueur), and "Kokoiban" (rice shochu liqueur for fruit wine).
