Akabu純米吟醸 愛山 NEWBORN

I bought it because I was curious about what kind of Aizan interpreted by Akabu, who never misses out on anything no matter what he drinks. The spring pink label is also nice. The robust aroma spreads in the mouth, and the sweetness has a soft but present presence. It is not too sweet, but has a fresh and tangy taste.

I am very curious to know which part is the "back side" of Mutsu Hachisen, which is the "front side. It has a gorgeous apple-like aroma and sweetness, just like a Junmai Daiginjo. The full rice flavor continues. I don't feel much gasiness.

I bought a bottle at the Omotenashi Marche at Hizenhama Station when I boarded JR Kyushu's sightseeing train "Futatsuboshi 4047". It has a muscat-like aroma and a smooth, soft sweetness that lingers in the mouth. It is supposed to be fire-brewed, but I wonder why I feel a little gas.

From a sake brewery that was chosen for the Ise-Shima Summit. The aim was to make the best food sake, so the Omachi-like punch was kept to a minimum, and the taste was rather mellow and well-balanced.

A bottle in a gorgeous, elegant package, perfect for celebrating the New Year. It has the richness and sweetness typical of unfiltered Omachi sake, combined with a hint of piquancy. It is fire-aged, so it can be stored for a long time.

A bottle of hiyaoroshi. It is mildly sweet and mild, rather dry and astringent. I had assumed that Hayaseura = sweet and delicious, but that was not necessarily the case.

Newly brewed raw sake that has been aged in an ice refrigerator at -5°C for more than six months. It has a melon-like sweetness in the mouth. After aging, the gassiness of the raw sake is gone and it is mellow and very easy to drink. Although it is called Tororichi, it does not have a thickening taste.

While sweet and delicious to drink, the gasiness and acidity combined to cut through the dryness at the end.

The Nishijin textile obi label adds to the atmosphere. It is a junmai sake but polished to 50%, so after a faint fruity aroma, the mouthfeel is very sharp.

I found it at a roadside station in Yonezawa and was attracted to buy it. It has a good balance of volume, fruity and sharpness of the original sake.
