Peach-like aroma, sweetness, umami, slight acidity and bitterness, with a light touch of flavor. I think it tastes better when it is chilled. I felt it was light and lackluster, but when I paired it with roasted cream cheese with sakekasu & miso pickles, I could feel its depth and it was good👍.

Sake with a strong sense of effervescence. For a while after taking it out of the refrigerator, the aroma is present, but the acidity is strong and the umami is not so good.
After about 2 hours, I finally started to taste the umami, acidity, and bitterness in the strong effervescence, and the aroma of rice came through my nose. I felt the timing of drinking was difficult 🍶.
Drinking comparison. They are completely different because of the difference in rice type and rice polishing. My wife said that the special junmai was a young man's sake with a clean and sharp taste. The Daiginjo is for adults with a deep flavor. Both are super tasty. Both are extremely delicious!
