The aroma, umami, sweetness, astringency, and effervescence (the "five-nouwaku" in my mind) all harmonized in a rounded way, and the taste had a great depth.
It's soooo good✨.
Sake with a strong sense of effervescence. For a while after taking it out of the refrigerator, the aroma is present, but the acidity is strong and the umami is not so good.
After about 2 hours, I finally started to taste the umami, acidity, and bitterness in the strong effervescence, and the aroma of rice came through my nose. I felt the timing of drinking was difficult 🍶.
Drinking comparison. They are completely different because of the difference in rice type and rice polishing. My wife said that the special junmai was a young man's sake with a clean and sharp taste. The Daiginjo is for adults with a deep flavor. Both are super tasty. Both are extremely delicious!
After feeling the thick, dense sweetness, the sourness comes and the sharpness is refreshing. ‼️
After a few hours, the thickening fades away and the sourness & spiciness can be felt. ‼️
It was a very tasty and interesting taste of sake✨.
My first kijoshu.
The aroma reminds me of green apples. The aroma reminds me of green apple, and the taste is sweet at first, but there is also a refreshing acidity.
Compared to drinking it in a glass, I could feel more gas in the glass 👍.
The aroma of apple can be felt, and the sweetness spreads at the moment of drinking, followed by astringency and bitterness. It is full-flavored, light, and crisp, and paired with sashimi, it was a superb taste. ‼️
It had little sweetness, with an apple-like aroma and flavor, and a strong acidity. It was a refreshing sake with a full-bodied flavor due to the orikarami process. It's also very tasty ✨.
It is fruity at the moment of drinking, followed by a beautiful acidity, and the sweetness does not linger on the palate, allowing you to continue drinking lightly.
Paired with kampachi sashimi today, it is so delicious. ‼️
A little time after taking it out of the fridge, the melon aroma spread and I began to notice a good balance of sweet and sour flavors. It is endlessly drinkable 🤣.
Cherry aroma with a tangy touch. The sake had a crisp, clean aftertaste after the umami & sweetness. Delicious✨
Today, we're having dinner with sashimi from our favorite fish shop👍.
