We were introduced to and purchased this brewery's challenging sake, which is a fire-brewed sake produced by Kurafan and distributed to the general public. The moment you put it in your mouth, it has a gorgeous aroma. It has a slight tanginess, but the tanginess quickly disappears with the passage of time. Serve with prosciutto ham The saltiness is just right. If you eat it with salmon kimchi from Seijo Ishii, the flavor might be a little too strong. Simple flavors seem to go well with it. PS: I liked it better the next day because the flavor was more intense. The acidity was stronger, and the sweetness and umami were more intense, and the fruity flavor was more intense. It is a mystery whether the taste changed due to the combination of food or physical condition, or whether the taste changed due to exposure to air. It tasted better than the day before.

I had it with an open mouthful. The moment I put it in my mouth, natto! A yeasty aroma like Mild on the palate. There is a slight sweetness and no aftertaste Served with squid sashimi, cod roe tempura, and corn tempura When I drank it with seafood, I thought I might not like the natto-like aroma, but when I drank it with corn tempura, I didn't mind the aroma at all. The sweetness of the corn is quite crisp, and there is a slight bitterness that does not linger. In any case, it's not my favorite flavor.

The aroma is not so strong, and it is easy to drink. No sourness, a little acidity, moderate sweetness, and a refreshing taste. Serve with Mentaiko Tempura and Maguro Mashita. I feel like the strong flavor of mentaiko might be too much for the sake, but it is easy to drink, so it might be a good match for the sake...? The sweetness of the sake is very strong after the taste of wasabi, which is nice. I never put wasabi on my sake, but it's a good addition to the sake. It is very easy to drink, but my impression is that it lacks impact for my taste.

No sizzle, mild mouthfeel, slightly sweet and delicious. No residue on the palate, but clean and refreshing. Serve with Maguro Mutsu When I drank the sake alone first, I thought it was quite refreshing, but after eating the tuna, I think the flavor is more intense. My favorite flavor!

Takane-Nishiki produced in Nagano Prefecture Unfiltered unpasteurized sake The aroma is not that strong, but the moment it enters the mouth, it has a fresh aroma. Slightly sour and sour taste. Mild fruit aroma with a hint of sharpness as it passes down the throat. The aftertaste does not leave that much of a residue on the palate. Easy to drink Asparagus tempura with green tea salt The oiliness of the tempura is gone and the drink is crisp and refreshing.

I had the pink one the other day and enjoyed it so much that I decided to try the blue one. The aroma is moderate, with a slight sapidity and a slight acidity. It is mild in the mouth, with a slight sweetness and bitterness, but it doesn't leave a lasting taste on the palate. Easy to drink. Serve with charbroiled chicken Is it better to drink it with a more light-flavored snack because the aroma is a bit overpowering for charcoal-grilled chicken? Or is it a good match in that it doesn't interfere with the flavor of the dish? The pairing is still a mystery.

The aroma is not so strong and not too sweet. Sourness, mild taste, sweetness comes for a moment, but then the weight (umami) comes. Bitter taste comes for a moment, but the taste itself does not linger, and it is easy to drink. Serve with cured ham dice.

Second record of the same brand. The color was pinker than the last time I drank it (I remember it was more milky white last time) and the taste was less acidic. This time, it was quite sweet and sour and gave a strong impression of a dessert. The person accompanying me, who is familiar with alcoholic beverages, described it as an alcoholic beverage similar to orange wine. The overall color, acidity, and sweetness were stronger than the last time I tasted it, and I had the feeling that it was the same sake! I had a feeling that it was the same sake! It is easy to drink and I like the taste.

Tangy and tangy No sake crispness, but a sake-like aroma in the nose Sweet and sour, with a firm taste. Heavy I was told by a sake lover that it is a good idea to keep a record of the snacks you eat with sake, so I will do so in the future. Manganji stuffed with meat It was delicious with a hint of sansho (Japanese pepper).

United arrows collaboration The flower style of rice and agave is a collaboration, but this is also a collaboration. This sake is made by the same brewery as Tedorigawa! It has a soft and juicy taste, sweet and sour, and sweet like a white wine. Sweet and sour, sweet like a white wine A refreshing taste that does not linger.

Unfiltered Nakadori unpasteurized sake The aroma is not strong, but it has acidity and sweetness, and the taste is very heavy but does not linger. You can taste the umami. It has a sharp taste when it goes down your throat, but you don't feel the strength of the alcohol. There is a popping sound when you open the cork, but there is no sizzling feeling. It is easy to drink and I quite like the taste.

Percentage 65 15% alcohol by volume Brewing alcohol I realized after ordering that it was not junmai (pure rice), but it is mellow and easy to drink without the sake's sharpness. It is easy to drink with no hint of sweetness.

Slightly sour, with a strong acidity. Slightly naturally sweet and thick, but with a clean aftertaste. Easy to drink, partly due to the fact that it has a strength of 6. I like the taste.

Junmai Ginjo Akita Sake Komachi Fruity and gorgeous aroma Sweet and sour taste It is quite robust, but the sweetness and acidity are nice and do not feel heavy. The sweetness that lingers in the mouth is also refreshingly sweet. I like it very much.
