PB Choyo Fukumusume. Honjozo.
It has a rich flavor, perhaps because it is an unfiltered, unpasteurized sake, but it also has a nice balance of sharpness. Great with food or on its own.
I was tempted to buy it because it was made in a wooden vat, even though I have always shied away from Yamahai.
It's so good! Yamahai is also good!
Lactic acidity, woody aroma, and sweetness. It has a clean aftertaste. I should have bought a bottle!
Is it going to be difficult to obtain? I am happy that it is easy to buy. It is super dry but has a nice aroma and sweetness on the palate. Is it because it's a draft sake? After that, it gives the impression of being dry. It is refreshing and goes well with any meal.
