It is mentioned as a modern Yamahai brewed with Ishikawa sake rice, water, and yeast that debuted in 2020. It is an enchantingly sweet sake that expresses the elegance of Kaga. I paired it with grilled clams. Great with grilled clams!

Happiness to be served inside the Natsuki-star. This sake was made by a female toji, who was involved from the rice cultivation process. It was a combination of a refreshing lightness that did not interfere with the sushi, and the core and powerful volume that is typical of Omachi. I want to take it home with me 😆.

At a small town sushi restaurant. The sake was recommended by the owner, who is a "Shitamado" (a person who has a strong drinking habit), but it was an all-rounder junmai ginjo with a hint of sweetness that went well with the sushi. Sake from Fukushima never betrays you, does it?

A completely additive-free brewed product by Tsuchida Sake Brewery, which was featured in the dancyu Sake Special. It is a completely different direction from Otters and the like, as it uses an Edo period production method. The 90% rice polishing ratio and the raw yeast structure make this refreshing sake truly wonderful. Sourness and a slight sake yeastiness. I wish more and more breweries like this would appear on the market.

Served at a sake event at Miyashita Park in Shibuya, Tokyo. Although I am from Osaka, I rarely see sake from Osaka. But Nose-machi is in a place where you might not even know it's Osaka. I was surprised to see a sake from Nose-machi, which is located in a place called "Osaka," so it might be a little bit different. This one tasted a bit like Yamahai, but I would like to try other types.

Second round of drinks at a local restaurant. I was attracted by the restaurant's reputation as "the only place in Tokyo where you can drink at this price," so I ordered one. The sake was as good as its reputation, clean and mellow, and perfect for a motsu-yaki restaurant.

Four of the seven Dewazakura marriages all-you-can-drink. 1) Shiboritate Nama sake Dewanosato 2) Sparkling sake Junmai Ginjo Dewa Sanzu Unfiltered Nama-genshu 4) Yamahai Junmai We were gradually led to darker and heavier sake, and before we knew it, the course was over. Unfiltered sake is still good.

We had it at a corner bar in Nakameguro. It is a sweet and sour wine with a slight bitterness! It has a pleasant sweet and sour taste with a slight bitterness. This sake may be liked by people who don't drink sake very often.

Kameguchi-shu is bottled directly from the pressed sake. This valuable sake can only be purchased at Sawanoi-en in Ome City. I had it at the tasting place and thought it was delicious! I took it home with me, even though they only sell 1 square bottle. Since it only fits horizontally in my refrigerator at home, I bought a 1-liter Italian swing bottle. I can buy more 1-square bottles from now on! Aside from that, it is still delicious. It has carbonation and a slight nigorigo, a rich ginjo aroma, and just the right amount of sweetness and acidity. It feels like drinking in a brewery.

Since I could not go to Kashima Sake Brewery Tourism, I bought a set of 5 bottles by mail order. It has a slightly acidic and dry taste that comes forward rather than being floral. It goes well with slightly strong dishes.

Along with a tour of the Ozawa Sake Brewery, we went to a nearby place where we could have lunch. Since we had already had a thorough tasting, we knew that all of them were delicious, but we could not fully remember which one was which. The tasting was described as "Ki-Sei-Kei", but the tastes were not so different from each other as to be called "Ki-Sei-Kei", but more like "Ki-Sei-Sei-Kei".
