If you pass by the Yamana Shuzo brewery, you have to buy it. Since I bought it in May, I was given a selection of good lukewarm sake, but I ended up drinking most of it cold. It is a robust dry sake that would be good as a food sake. As the temperature rises, the bitterness becomes stronger, so drink it cold. It would also be good warmed up. 3.9/5.0

Mouth opening shrieking and fizzy. Slightly bitter only in the first 5 minutes, the rest is very clear and pure. Yummy! The slightly effervescent bubbly sensation lasted until the next day. A great favorite! 4.8/5.0

I heard from a brother at a liquor store that this was named in response to "Saku," although it is said to be a hoax that the "Saku" was named with Gundam in mind. What is the truth? Brilliant aroma, crisp and sharp. I have only seen it here at Liquor Mountain. It is delicious! I like to drink it at about 15 degrees because it tastes bitter when it is cooled down to a very cold temperature. 4.6/5.0

On a trip to Kyoto, I went to a convenience store to procure a nightcap at the hotel. I was bored with a cup of sake. I found a small bottle of Kyoto sake! This is it, this is it. Mellow and firm flavor. Aroma is long and lingering. It's quite delicious. I liked it. What?　You ask if the small bottle was enough? I drank one beer and one lukewarm sake at dinner, so I'm fine. 4.6/5.0

Purchased at a local supermarket, Taguchi Foods, for about 1000 yen. It is round yet sharp, with just the right amount of sweetness. It is sinking in after a short period of sobriety following a petit surgery. Cheap and tasty sake, honorable mention! 4.0/5.0

Komae City's Kagoya's third location opens in Sengawa! I went there right away. Perhaps because it is smaller than the main store, they only carry four-pack bottles, but they have a good selection of rare items. I found one with an interesting label and bought this one (the label was torn!). I thought it would be like champagne because of the "pitchy" description, but it is not at all. Although the 70% polished sake has a certain amount of miscellaneous flavors, it has a robust flavor and a high alcohol content. The cemedine-like smell in the first sip is a bit off-putting, but it is a bit dry and not bad at all. Acidity is low. The sweetness increases as the days pass after opening. Although it is a draft sake, I think it tastes best at room temperature. 3.5/5.0

I bought it because it was labeled as a Shinanoya original at a high-end supermarket in my neighborhood. When I accidentally drank it cold, it was ugh! Bitter!　Astringent! I thought it was out of the 2-star range, but I thought better of it and drank it at room temperature and lukewarm a few days later, and the bitterness was gone. A week later, when I warmed it up again, it tasted more like solid rice, and the bitterness was gone. You can't go wrong with temperature. I wonder if anyone has ever used the metal that instantly ages wine to make sake? ★★☆☆☆
