Both wines are very refreshing and well-balanced. The white is similar to the Senkin, refreshing with high acidity, while the black has more grain (cold rice) and raw material sweetness (sugar sweetness), and is thicker. Refreshing, restrained, stable and layered, unlike the usual bodegas that have a strong lactic acidity. Although refreshing, it is richly layered and matches well with fatty foods, with barrel aroma in the mouth, restrained and complex acidity in the mid-palate, and pleasant sweetness in the finish, with slight bitterness in the end. The richness of the layers, even though it is refreshing, will not be stolen by the food, it is an amazing wine to be used as a wine, supplemented by a meal!

The scent is rich and bold with notes of apricot, iris, white rose petals, jasmine and a touch of apple as it warms up a bit. It smells like Turtle Springs Cel-24, but with more floral notes and a more subtle layering. After opening the bottle, it fills the air like a perfume. When the temperature rises to 16 degrees, it turns more fruity and sweet, with a honey-sweet finish. This is the first time I've had Flower Sun Bath, and I'm really impressed!

Rounded and layered, with the common aroma of raw wine ripened into nuts, but with the sweet aroma of green cantaloupe pulp, the middle section is like the sweet and sour of lemon sugar, the back section is slightly bittersweet to finish, then the sweetness left at the base of the tongue will rise again and transform into the sweetness of a rice cake-like pastry, subtle and long, making people savor the taste again and again.

Fresh and sweet, with cherry candy, peach and some pear sweetness. Slightly fizzy at the opening of the bottle, the overall fruity aroma is complex and thick, with rich layers, sweet but not greasy, with a slightly bitter finish. I bought the Nigata Sake no Jin after trying one glass, and it was really delicious!

Really need to open the bottle attention ... ... iron ring opened half, the bottle cap directly sprayed out, the wine probably spilled a cup or so QQ! Fruity aroma with milk guava, melon, grape pulp and some honey sweet aroma. In the mouth, the bubbles are distinct and delicate, bringing out a soft and deep sweetness, with crisp acidity, achieving a perfect balance of sweet and sour to finish, with hardly a trace of bitterness or other impurities. It should be my first time to drink Echigo Kagura, and I found out that it is the result of mating Yamada Nishiki and Hokuriku No. 174, and the overall data performance is similar to Yamada Nishiki, but it is more cold-hardy. Starting off with First Class, I think I got something wrong with Echigoraku 😆.

It is also a rare super-hard water, but with the use of Goemanshi, which is usually more muted in expression, it shows Iwanoi's distinctive richness. Fresh and acidic on the palate, with a full-bodied mid-palate, balanced between sweet and sour, and a clean finish.

It is rare to find a sake brewed with ultra-hard water. It has a slightly mineral flavor, with the acidity from the mountain waste and the rich flavor of Yamada Nishiki. Although it is a bit strong, it has layers of sweetness and sourness, which makes the whole drinking process quite refreshing. It also goes well with heavier foods!
