It is made from early rice harvested in August The rice was harvested in August and shipped in October. As you can see on the label, the rice is polished to a very low 90%! You might wonder what kind of peculiarity it is. The aroma is refreshing and fruity! The taste is rich with the flavor of the rice. It is tingly and has a fresh sour taste. The taste is strong, but the aroma and sourness make it easy to drink! It has a freshly harvested and squeezed taste. A good concept sake😁. I like it very much! I want to drink it again next year! According to the owner, the flavor of the rice bran comes out well! The flavor that I usually compare to fruit I was shocked to learn that the flavor I usually compare to fruit is originally rice bran 🤣.

If it was just the aroma, I would think it was Junmai Daiginjo. The taste is sweet and sour with a strong acidity. The sourness connects to the aftertaste At the end, the alcohol flavor remains softly. (Memo: This is said to be the aftertaste of Wasanbon type) It has a rich aroma in the mouth, and I felt like a Daiginjo. [On the second and third day after opening the bottle] Ah! It's delicious! Let's get back on track... It smells like apples. It tastes... oh! It's sweet! It's packed with sweetness! It's like a darker version of a melon fruit. It tastes like a thickened melon fruit! But why does it feel like a gentle sweetness? And then all of a sudden, the alcohol comes in with a kick. It becomes the aftertaste like Honjozo. The sudden change in flavor is interesting! Even though the alcohol content is 18 degrees But it has a gentle sweetness on the palate, so you can drink it quickly! Be careful not to drink too much of this delicious sake!

It has a distinctive hiyaoroshi aroma with a hint of sake. I thought it would be dry from the aroma. I thought it was. But when you put it in your mouth, it has a sweet and sour taste that is typical of Akatake. After that, a gentle alcohol feeling rises It finishes with the dryness and sharpness typical of hiyaoroshi. If I were to compare the flavor to freshly picked white peaches It's like a freshly picked white peach.
