The bitterness becomes more rounded and the umami becomes more prominent.

The acidity comes out and it becomes fruity.
Overall, it is a sake with a strong umami flavor.
It's right in the middle of what I imagine Hiyaoroshi to taste like.
I hit the very center of what I imagined it to be😃.
Personally, the second day is the best day to enjoy the bitterness.
I also recommend the 4th day when it is easy to drink for everyone.
