I tasted it at a corner shop in Aomori, liked it, and bought it immediately. This is the first Inamuraya brand I have ever had. It has a melon-like aroma, a slightly sweet white wine impression, and a good acidity and sharpness. However, it has a delicate taste, and if you drink it with food, it will go into your mouth unconsciously, so I personally recommend that you savor it slowly and without food.

The rice flavor, acidity, bitterness, and sharpness were amazing. As one would expect from a 17 degree Celsius bottle. In a good sense, it might be better to drink it without any preconceived notions that it is a junmai daiginjo.

This is my first time to try Hirotogawa's special junmai. At first, it was served cold. The aroma is subdued and the sweetness and umami of the rice is gentle. Then, at room temperature. The mellowness of the rice increased and it became even easier to drink. However, if you drink it with something, it will go in too quickly unless you are conscious of it, so I personally recommend you to savor it slowly without any accompaniments.

The aroma and acidity are not very strong, and the mellow and gorgeous flavor of the rice spreads in the mouth. I personally recommend light flavors with snacks, as lighter flavors are better than dark flavors, allowing you to drink with a strong sense of umaguchi.

A gift. I have had Li Bai's Shojinshu before, but this is the first time I have had Shojinshu made with Tokyo University of Agriculture's "bekonia flower yeast. I compared the two sakes, cold and room temperature, and found the cold one to have a more robust yeast flavor and sweetness. The cold sake has more of the yeast's gorgeous umami and sweetness.

A gift from a colleague who has a friend in Fukushima Prefecture. It was the first time I had tasted this sake, so I looked it up and found that it was brewed by the Kinsho Sake Brewery using water from the Arakawa River in Fukushima Prefecture, which has been voted the best water quality in Japan for 13 consecutive years, for washing rice and brewing sake, and using "Fukunoka," the prefecture's original sake rice produced by the Arakawa Sakura Zukumi Sake Brewery Association. The first time I drank it, it had a fruity aroma like white grapes and a sweet, full flavor, but it also had a sharp taste down the throat. I drank it cold on the second and third days after opening the bottle, but the aroma and taste did not change much. It was quite enjoyable.
