The sake is stored in tanks at sub-zero temperatures for about five months after the tanks are filled in the summer. Over time, it develops a slightly rounded and subdued flavor.
The 807 series is characterized by a rich and complex flavor, which is created by utilizing the energy of the rice in the brewing process while maintaining the smooth texture that is characteristic of Omachi.
