Tonight, we have a first in the series, this one from the Higashitsuru Sake Brewery in Saga Prefecture. It seems to be a 🌸🍶 spring sake, but I'll have it in delay mode as usual😅. From the opening of the bottle, it has a gorgeous acidity and a nice greenish pineapple aroma 🍍☺️ The top clear layer is sweet and acidic and juicy, but the second half is characterized by bitterness, making it easy to drink 😋. The sake rice is different, but I think the quality is similar to that of Hana-yosuyu. Saga still has a lot of good sake 🥳.

Sweet aroma like melon, sweet and bitter with a strong bitterness and sour aftertaste. The bitterness lingers, but it's delicious😋. It's a unique sake 钎It's good as a food drink too. I'm not sure if it's because it's a new sake or not, but it's got a bit of an edge to it.

The bottle was opened without any sign of carbonation. The whey-like smell is gorgeous. The taste is dry and rice-like. It finishes with a sense of rice and acidity. It is a taste you can find when you drink orikara-mi. The sweetness is added by mixing in the ori that has accumulated at the bottom, and it is just right. It is delicious. As you get used to drinking it, it becomes more familiar to your tongue and you can drink it in large gulps, and it is irresistibly good as you continue drinking it. It tastes even better after a year in the refrigerator, but I can't wait that long.

Purchased at a local liquor store during an expedition to Gunma! I opened the bottle with the caution ⚠️ in mind when opening the bottle...! Even though I was aware of it, I was surprised‼️ aroma: a faint, fruity aroma of rice, and already, a shriek! It's already a sparkling wine...this is delicious 😋I examined it while feeling the high quality...Gunma's local sake is not to be underestimated...it's delicious 🍶.

A delicious, sweet, junmai sake. It's as natural as "Shizenshu"! It's hard to believe it's 80% rice polishing ratio, but I get the impression it doesn't contain anything impure. It's just after the autumn, so it has a great flavor. It's an autumnal sake, but it's also good to drink it sipping after the start of winter! After the second day after opening it, the acidity came out lightly and the taste of the drink progressed further.

At home. Hatsutanaka Rokuugo. A famous sake, but I didn't know much about it... Yamada-Nishiki, it's a tanaka in the middle of a rice field. I knew it for the first time. The aroma is fruity (Muscat type?). Good balance of sweetness, umami, acidity, and bitterness. It is a quintessential gem, suitable to be enjoyed in a relaxed and leisurely manner.

Junmai-shu, 65% polished rice, brewed by Mr. Tanaka in a sake brewery located in the rice paddies. Tanaka Rokuugo. I knew it was delicious from everyone's postings on Sake no Wa 😊. I thought it would be more of a gusto, but it was a delicious sake with a gentle rice flavor and a light texture♪ Kyushu has an image of shochu, but I was surprised at the high level of sake as well, including Tanaka Rokuugo, Koei Kiku, and Sundo 😆. I'm looking forward to trying some of the other sake I have in stock 😁.

White grapes like balls, hops, umami, acidity and sweet sourness that stimulates the back of the tongue, slight effervescence, beer-like bitterness and freshness and the balls pop and the juiciness sweet and sour, and it's crisp and clean.
