Tonight, we have a first in the series, this one from the Higashitsuru Sake Brewery in Saga Prefecture. It seems to be a 🌸🍶 spring sake, but I'll have it in delay mode as usual😅. From the opening of the bottle, it has a gorgeous acidity and a nice greenish pineapple aroma 🍍☺️ The top clear layer is sweet and acidic and juicy, but the second half is characterized by bitterness, making it easy to drink 😋. The sake rice is different, but I think the quality is similar to that of Hana-yosuyu. Saga still has a lot of good sake 🥳.

Purchased at a local liquor store during an expedition to Gunma! I opened the bottle with the caution ⚠️ in mind when opening the bottle...! Even though I was aware of it, I was surprised‼️ aroma: a faint, fruity aroma of rice, and already, a shriek! It's already a sparkling wine...this is delicious 😋I examined it while feeling the high quality...Gunma's local sake is not to be underestimated...it's delicious 🍶.

A delicious, sweet, junmai sake. It's as natural as "Shizenshu"! It's hard to believe it's 80% rice polishing ratio, but I get the impression it doesn't contain anything impure. It's just after the autumn, so it has a great flavor. It's an autumnal sake, but it's also good to drink it sipping after the start of winter! After the second day after opening it, the acidity came out lightly and the taste of the drink progressed further.

June 3, 2023 At Japanese Sake Satou in Matsuyama, Japan. I took a new employee to my favorite restaurant to drink sake. The fifth sake was Yamagata Masamune Junmai Gin The fifth cup was Yamagata Masamune Junmai Ginzoku Gekidaku. It is made from Yamada-Nishiki, Omachi, and It is a limited-edition shipment of a well-balanced blend of Yamada-Nishiki, Omachi, and Dewa-Tsanbai junmai ginjo. It is a blend of Yamada Nishiki, Omachi, and Dewa Tsannin Junmai Ginjo in good balance. It is very thick, but has a nice sharpness. It is a dry sake that is thick, but has a nice sharpness and is very refreshing to drink. It is a dry sake that can be drunk very refreshingly.
