Jyuemon" by Toshimaya Shuzo, well-known for Yamori... it's a stone's throw away! Nakadori unfiltered raw sake, fresh and crisp... Hachitan-nishiki has a nice aroma... my favorite fruity flavor... and the mouthfeel... a good bitterness of sweetness and bitterness, followed by the sharpness of Hachitan-nishiki! It does not disappoint! I'm sure many people prefer this to Yamoru... I'm sipping it while grilling oysters... yummy!

Another brand of YAMAMORI Purchased at a supermarket near my house. It is a Hachitan-Nishiki, a specialty of Teshimaya, and the taste is almost the same as Yamori's. The aroma is fruity and melon-like. The base is sweet and delicious, but after drinking it, it may seem drier than Yamori's Hachitan-nishiki. Umai 👍👍 The best match this time was sauteed sea bream with butter. It goes better with something with a strong flavor 😋😋. Yamori is my favorite brand, but I think I even like this one more than Yamori❗❗❗ Next time I buy it, I'd like to open the bottle at the same time as YAMORI and compare them properly 😆😆.

I love the dry carp river😍. Tasted it before mixing the nigori ❕😀😀 I think it's a bit alcoholic. I will mix the nigori and have it. From the jacket, I thought it would be a light, dry, smooth and elegant type 🤔. When I drank it, I found it to be medium dry with a solid richness and flavor... 😋 I felt like we suddenly became friends🎶. Sauteed peppers with salted kelp (salted kelp flavor), turban shells in a jar, goes well with a variety of Japanese food😻 It's also a great gift 👍✨.

I usually don't drink that much 🍷 and 🍶 a little vacation. I only drink Nouveau 🍷 at a small wine specialty shop owned by the owner, who has experience as the best sommelier in Japan every year. (I told him that I actually like Sake and he said that he only drinks Obuse Sogape and one other sake brewery for everyday drinking...I'm curious...wait a minute...he came from the back and brought me this! I'm sorry, I don't know this brewery...but they have hiyaoroshi and yamahai. So he shared his favorite hiyaoroshi with me! It's easy to drink, has a nice mouthfeel, and is dry with a nice flavor and sharpness. It's also delicious and reminds me of a white wine! The Nouveau chosen by the owner this year was expensive... but he said he had no choice because of the weak yen and the international situation.

Get it at "Marugoto Kochi" in Ginza, Tokyo❗️. I had never heard of this brand before, but it was delicious ❣️. The rice used was something from Kochi Prefecture. It has a fresh citrusy taste like a fresh sake, with a rich mouthfeel, but it goes down smoothly. The aftertaste is clean and crisp. If I had to say something, I would say that I would like a little more sweetness, but it is just right for light drinking.

Second day of Kochi Night. The cab driver told me that Hirome is good, but for bonito, I should go to Matsuri Jaya. He advised me to go to Matsuri Jaya for bonito, as it has a good selection of alcohol. So we went to Matsuri Jaya. At first, we started out with regular sake, just like a normal drinking party in Kochi. The staff at the restaurant recommended various temperatures for drinking. The first sake is Fujimusume, which I have never tried before. Slightly spicy and umami-guchi (flavorful), it was a perfect match for the thickly sliced salt cod roe. The special sake cup is also cute! But from here, I sank into the swamp of Kochi sake.

I caught some bonito, so I hit the Tosa sake. Although it is a Tosa sake, I did not go to Kochi to get it! Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop. Personally, I've always had the impression that Yamadanishiki has a sweet aftertaste, but the dryness of the flavor reminded me of the diversity of Japanese sake. And even though it's supposed to be a little out of character for my taste, it was a dish that made me drink more! As the temperature rises, the taste is distinctly sweet at first and then dry (and crisp) at the end. It broke the stereotype that Yamada Nishiki is sweet! The brewery started brewing in 1922. The name of the brand was changed from the famous water "Horime-no-Ido" to "Horinoi".

There is no mention of it, but it is probably nama sake. It is not labeled as Nama-shu, but according to the information on the Internet, the label on the back of the bottle says it needs to be kept chilled, which means it is Nama-shu. Am I right? The rice is Ginbukiyo and Nihonbare. It also looks like a raw sake. It does not feel as spicy as the sake level, and although it is spicy, there is a good balance of sweet and spicy. The taste is light and refreshing. The spiciness finishes with a lingering sweetness. There is a good amount of graininess.

Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.

The third group of the Sake Rice and Yeast Association is Gintome and Yuko's Idea from Iwate Prefecture. Iwate is often named after the pure-heartedness of the Tohoku region or after Kenji Miyazawa, and the rice is Gintome, which is a Gin user. Yuko, the yeast, seems to be named after the developer, Ms. Yuko Yamashita of the Iwate Prefectural Industrial Technology Center. It is a clear, dry sake. Sake from Iwate is interesting in many ways.
