Hachitan-nishiki has a nice aroma... my favorite fruity flavor... and the mouthfeel... a good bitterness of sweetness and bitterness, followed by the sharpness of Hachitan-nishiki! It does not disappoint! I'm sure many people prefer this to Yamoru... I'm sipping it while grilling oysters... yummy!

Another brand of YAMAMORI Purchased at a supermarket near my house. It is a Hachitan-Nishiki, a specialty of Teshimaya, and the taste is almost the same as Yamori's. The aroma is fruity and melon-like. The base is sweet and delicious, but after drinking it, it may seem drier than Yamori's Hachitan-nishiki. Umai 👍👍 The best match this time was sauteed sea bream with butter. It goes better with something with a strong flavor 😋😋. Yamori is my favorite brand, but I think I even like this one more than Yamori❗❗❗ Next time I buy it, I'd like to open the bottle at the same time as YAMORI and compare them properly 😆😆.

There is no mention of it, but it is probably nama sake. It is not labeled as Nama-shu, but according to the information on the Internet, the label on the back of the bottle says it needs to be kept chilled, which means it is Nama-shu. Am I right? The rice is Ginbukiyo and Nihonbare. It also looks like a raw sake. It does not feel as spicy as the sake level, and although it is spicy, there is a good balance of sweet and spicy. The taste is light and refreshing. The spiciness finishes with a lingering sweetness. There is a good amount of graininess.

The third group of the Sake Rice and Yeast Association is Gintome and Yuko's Idea from Iwate Prefecture. Iwate is often named after the pure-heartedness of the Tohoku region or after Kenji Miyazawa, and the rice is Gintome, which is a Gin user. Yuko, the yeast, seems to be named after the developer, Ms. Yuko Yamashita of the Iwate Prefectural Industrial Technology Center. It is a clear, dry sake. Sake from Iwate is interesting in many ways. Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.

When I drank it, I found it to be medium dry with a solid richness and flavor... 😋 I felt like we suddenly became friends🎶. I usually don't drink that much 🍷 and 🍶 a little vacation. I only drink Nouveau 🍷 at a small wine specialty shop owned by the owner, who has experience as the best sommelier in Japan every year. (I told him that I actually like Sake and he said that he only drinks Obuse Sogape and one other sake brewery for everyday drinking...I'm curious...wait a minute...he came from the back and brought me this! I'm sorry, I don't know this brewery...but they have hiyaoroshi and yamahai. So he shared his favorite hiyaoroshi with me! It's easy to drink, has a nice mouthfeel, and is dry with a nice flavor and sharpness. It's also delicious and reminds me of a white wine! The Nouveau chosen by the owner this year was expensive... but he said he had no choice because of the weak yen and the international situation.

(- 迭- )🍶🍶🍶🍶 Today I got a sake called Chushingura that I got as a gift 😀 It says it's first shibori-nama-shu but it was aged at room temperature for more than 6 months 🤣Strong style 🔥💪🏾 but I chilled it before drinking 👀. The aroma is mild🤔. When you put it in your mouth, the rich flavor of rice 🌾 spreads in your mouth 😊👍and it has a nice sharpness so it's a very drinkable sake 😚👌. I don't know about the original raw, but this is a delicious sake 🥳.

If it's a regular sake, I imagine it would be a Junmai sake, and it would be a very bad one at that! I would definitely like to try the junmai sake! Mr. Ota is in Shinjuku! Mr. Ota went to a sake bar in Shinjuku, where the sake was delicious, and to Robeliya, a very deep bar in Shinjuku's Golden Gai. A 30-minute broadcast in two bars is too short!

Today is the annual New Year's Day visit to Kawagoe Naritasan Naritasan, and then to celebrate the golden wedding of my wife's parents. Dinner.
