The first saké I had last time was a clear saké of Yumeginko from Bishu Kotobuki with No.7 yeast. It is a draft sake, but it was stored at room temperature at the store, so we served it as it was. From the jacket, I thought it would be a light, dry, smooth and elegant type 🤔. When I drank it, I found it to be medium dry with a solid richness and flavor... 😋 I felt like we suddenly became friends🎶. Sauteed peppers with salted kelp (salted kelp flavor), turban shells in a jar, goes well with a variety of Japanese food😻 It's also a great gift 👍✨.

I usually don't drink that much 🍷 and 🍶 a little vacation. I only drink Nouveau 🍷 at a small wine specialty shop owned by the owner, who has experience as the best sommelier in Japan every year. (I told him that I actually like Sake and he said that he only drinks Obuse Sogape and one other sake brewery for everyday drinking...I'm curious...wait a minute...he came from the back and brought me this! I'm sorry, I don't know this brewery...but they have hiyaoroshi and yamahai. So he shared his favorite hiyaoroshi with me! It's easy to drink, has a nice mouthfeel, and is dry with a nice flavor and sharpness. It's also delicious and reminds me of a white wine! The Nouveau chosen by the owner this year was expensive... but he said he had no choice because of the weak yen and the international situation.

Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop. Personally, I've always had the impression that Yamadanishiki has a sweet aftertaste, but the dryness of the flavor reminded me of the diversity of Japanese sake. And even though it's supposed to be a little out of character for my taste, it was a dish that made me drink more! As the temperature rises, the taste is distinctly sweet at first and then dry (and crisp) at the end. It broke the stereotype that Yamada Nishiki is sweet! The brewery started brewing in 1922. The name of the brand was changed from the famous water "Horime-no-Ido" to "Horinoi".

Get it at "Marugoto Kochi" in Ginza, Tokyo❗️. I had never heard of this brand before, but it was delicious ❣️. The rice used was something from Kochi Prefecture. It has a fresh citrusy taste like a fresh sake, with a rich mouthfeel, but it goes down smoothly. The aftertaste is clean and crisp. If I had to say something, I would say that I would like a little more sweetness, but it is just right for light drinking.

Second day of Kochi Night. The cab driver told me that Hirome is good, but for bonito, I should go to Matsuri Jaya. He advised me to go to Matsuri Jaya for bonito, as it has a good selection of alcohol. So we went to Matsuri Jaya. Spring Tokaido Sake Brewery Tour (2) Dragon Boat Festival🎏 is Kabuto-chan. The second bottle is Suzukabuto. It is junmai ginjo new sake. It is safe to say that this one went out with a real mission. The rice is Ginbuki, a sake rice from Shiga Prefecture, just like the first bottle, Hatsuzakura. It is served cold. It has a slight yellow hue. The top aroma is very mild. It has a juicy aroma reminiscent of fresh bamboo grass, young dried grapes, and oranges. The mouthfeel is round. From the bluish alcoholiness, the juicy orange aroma and acidity are gently developed with a smooth and robust rice feel. The taste is sharp with a tangy, bitter and pungent flavor. The refreshing acidity typical of junmai ginjo-style sake, the familiar rice flavor, and the sharpness of the aftertaste are all nicely integrated. It is a moderate, not too hard-core food sake, and the more you drink, the more you will want another glass. Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.
