Rice used is Miyamanishiki I didn't find it too harsh, but my partner, who prefers a gorgeous sweet taste, found it too much for his palate. It is true that the alcohol taste comes first, and the mouthfeel is not smooth. As the day goes by, the corners are removed and it becomes more moderate, so it might be better to go out with it slowly, but I don't dislike it in this way.

I was in a sake store near the train station in Yonezawa when I was traveling and asked the owner what was the best sake in the area 😅🍶🍶. The owner of the store recommended this "Koubai" 😅🍶. My daughter-in-law gave it to me as a Father's Day present, but I don't remember exactly what it tasted like back then 🙇🤣🤣I don't know if it was a coincidence or if he remembered what I said at some point, but I tasted it for the first time in 40+ years (I'm getting old lol😅😅) 🤣🤣🤣🤣🍶. The color was clear and colorless, and although it was described as having a "gorgeous aroma", it was quite subdued and had a mild mouthfeel. It was a bit of a sharp taste and did not linger on the palate, perhaps due to the alkaloids. I don't know about the original sake as this was my first time to Izutsucho, but the first thing I noticed was a very pretty strawberry color from the amazake lees mixed with the pink 🩷 of the pickled plums. La Chante the other day. I first learned about the sparkling LaChante when I visited Akita. Poured into a champagne glass, the beautiful appearance of bubbles rising from the glass is champagne itself 🥂. It is brewed with 100% Akita-Komachi and water from the Ou Mountains. It tastes like sweet champagne 🍾. But I personally didn't like the aroma. It smells a bit like glue for a moment after you take a sip from the top of the bottle. It's so perfect that it's hard to believe it's made from rice, but compared to real champagne (not that it needs to be compared), it's less subtle and has a strong rice carbohydrate feel (which is a good thing).
