Sanko Tenpyo Yamahai Junmai Unfiltered Nama-shu Omachi Michihiro Yamauchi's sake was also hard to get my hands on because of the gutsy, robust image of his sake, following in the footsteps of Katsumasa Takagaki, the toji of the company. We had it cold. The color is a little yellowish. The aroma is sweet, with a lactic acid-like fermentation aroma of Yamahai. The mouthfeel is smooth, smooth, and heavy. The taste is mild at first, but then the juicy lactic acid acidity is strongly felt, with a burnt caramel-like flavor and a heavy grain-like flavor. The aroma on the nose is softly apricot. The flavor is carried through to the aftertaste, and the end result is a very strong and strong alcohol taste. It seems to be good warmed up, so it's time for a visit to Nonbei Yokocho. It was warmed up to human body temperature or lukewarm at first, with a very mild and mellow acidity. Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.

The aroma does not change much in the mouth, and after the alcohol and weak acidity, the umami of rice comes easily. The aftertaste is stimulated by alcohol, but it is not an unpleasant attack, but rather a strange numbing sensation and heat. There is no significant change even when the temperature is set to room temperature. Should we wait a few days? Two days later, the alcoholic stimulation has disappeared, and the umami of the rice has become noticeably mellower. The aroma is still cider-like, so the overall impression is that it is a cross between sake and mead. This is good.

The rice used is Gohyakumangoku. I bought it at the end of last year at an antenna store in Toyama. I didn't know about this brand. The color is a light amber. The color is pale amber, and the flavor is just as it should be. It's relatively easy to drink because it's crisp and not overpowering, but it didn't seem to suit my partner who likes floral and sweet flavors. It didn't match well with the grilled chicken, but I think it will swell up with time, so I'll leave it for a while. It's quite a unique sake, and I don't dislike it!

It may seem expensive, but it's just right for me, as I think it's a bit expensive to buy a whole bottle. (I tend to drink too much.) It is 17 degrees Celsius, so be careful. A bottle is fine, but it is perfect for those who don't want to drink too much and just want to drink a little. I recommend drinking it completely cold.

☀️ Masamune hunters go today🍶. I found an undrinkable Masamune at "TABI BAR & CAFE SUZUVEL" 😆. It is a Masamune brewed by Obata Shuzo, famous for Manotsuru. It has a mineral aroma 😳. Clean herbal mouthfeel 🌿. The aroma is so rich that the sensation of sake fades 🫥. Rice flavor🌾 masks the sweetness and acidity, and the ginjo aroma stimulates the nose. It leaves a slight bitterness and astringency in the aftertaste🙄. It was a new drinking experience with a unique flavor 🤗. How cool to "speak without speaking" 🤩. I thought I should come up with a catchphrase like "Nice Masamune without talking about it" ❓🤣. Nice Masamune👍
