profile icon☆☆☆☆☆ Firm and rich taste. It stays in the mouth for a long time. I think the aftertaste is the main thing rather than the lingering taste. It's great to be able to savor the flavor for so long.

profile iconJuicy with a certain freshness. Bitter acidity like grefr, with a burst of grain and koji-like flavors. After passing through, it has a fresh aroma and a sharp acidity. After that, there is a lingering taste of rice. Delicious!

profile iconAmber-colored aged sake. It has a peculiar taste. As the name suggests, it tastes good with peculiar meats such as gibier! I paired it with cheap carpas (the best). I heard it is also delicious over vanilla ice cream, and the picture is from when I tried it.

profile iconPurchased at the Fujii Honke Storehouse Opening Made with "Ginbukietsu" sake rice The strong alcohol taste of the original sake, but the gorgeousness of the ginjo sake and the mild sweetness of the rice that comes afterward give a satisfying sensation. At the brewery opening, you can enjoy unlimited sake tasting with a cup of sake for 1,500 yen. Also, there were specialties of Shiga Prefecture such as red konnyaku and shrimp beans, and we drank too much with these snacks!

profile iconI didn't go to the brewery, but I haven't seen Kyushu Chrysanthemum in Tokyo either, so this will be a first for me. The first aroma is sweet with a hint of acidity. In the mouth, there is a slight bitterness and a strong sweet umami taste that is typical of nama sake. This is a honjozo sake, but it is a very good sake that does not feel like it has been alkaloated. The price is also very reasonable at around 1,300 yen for a five-pack. In Tokyo, you only see gougo bottles of kenrishi or shochu 🤔. I wonder if it is more common in the west?

profile iconThis is a new release from the sake brewery closest to my house. I was curious about this sake because it was made by locally grown Omachi, so I bought it. It's rather refreshing and a bit lacking in the traditional sake taste 🤔. I tried it warmed up on the instagram of the liquor store where I bought it, and it was great! The flavor opened up and it tasted great. I'm glad to see local sake trying different things 👍Thank you for the food 🙏.

profile iconPurchased at a liquor store near Kokura Station The label with a strong sense of specialness caught my attention. I left it at room temperature for about 5 months, missing the fact that it needed to be refrigerated. (immediately after opening the package) Drink it cold. Slightly yellowish but clear Strong aroma of maturity with sweetness. Sourness on the palate The palate is immediately filled with a richness and at the same time, a strong dryness appears. The aftertaste is medium. The aftertaste is surprisingly light. The rich taste is very tasty. Although it is rich, it goes well with sashimi.

profile iconSake from Tondasato, Takatsuki City, Osaka Prefecture Junmai Ginjo-shu named after the number of years since its establishment Nama sake seems to be limited in quantity Dry but with a touch of sweetness afterwards It has a very unique aroma. If I were to use an analogy, it would be like a Hakka-flavored candy drop. (Note: I let it sit for 2 days before drinking, and the unique aroma disappeared, and I started to taste sourness and fruity flavor. I prefer this one.

profile iconIt had a mild mouthfeel that I wanted to roll around on my tongue forever. I thought I would drink it slowly because of its high alcohol content, but it was so good that I drank too much, I was going to drink it slowly because of its high alcohol content, but it was so delicious that I drank too much of it. Sometimes I felt the aroma of strawberries. It seems to go well with fruits.

profile iconShimono tasted Nikko sake. It has more than enough umami, but the aftertaste is clean. I think it has an exquisite balance. It was a truly delicious sake, and you could sense that it was made with great care.

profile iconSake rice is Yamae-Nishiki from Nagano, Japan. Koji rice is 35% and Kake rice is 58% polished rice. The alcohol content is 15.5%. The aroma is like a sweet ginjo aroma of muscat Muscat. The taste is sweet and umami, not too sour and mellow. It is mellow and not too acidic. The sweetness is not too strong, so it has a nice sharpness.
