I've been making my way to restaurants with good service lately. Today they served me a fresh aged sake. Today is February 6. This is my first Kinkame. My first impression was that it was very good! Next, it has a strong umakuchi taste. The acidity at the end is good, just like Yamadataro. It is like a light kijoshu, and it is delicious. Shiga is nice.

This sake is brewed by Umeshiki Yamakawa, a subsidiary of the major sake maker Hakutsuru Shuzo. In recent years, Hakutsuru Shuzo has purchased a number of breweries from across Japan. The Aomori-based brewer Momokawa, which uses Hakutsuru Nishiki, is also a subsidiary company of Hakutsuru Shuzo. Not much of an aroma, slight whiff of alcohol. Dry, watery and clean on the palate, with little umami and a slight alu taste. After drinking it, it has a light throat feeling with a faint sweetness. It is a standard shokuchu sake. For the snacks, we had stewed kalbi and root vegetables, mussel pickled in soy sauce, chili bonito sakutome, and baby star ramen with the flavor of kondashi. It goes best with sakabuto, which enhances its sweetness.

I bought it because my child's name has the character for virtue in it lol. I was surprised by the color when I put it in a glass. The best thing about this product is the fact that it is made in Indonesia. I'm not sure if I've had enough, so I opened this bottle, but my face is starting to go numb 🤪 lol

I went to Yamagata for the first time in a long time😊. I was allowed to drink sake at my uncle's house. Mellow and sake-like sake, just the way I like it for everyday drinking 😊. There was also some Asahitaka at night, but I don't remember drinking it. I forgot to take a picture 🥲.

The rice used is Yamadanishiki from the Sato Plantation in Sosa City. It is said to be free of chemical fertilizers and synthetic agricultural chemicals. The sweetness is moderate. The acidity is citrusy with a crisp, bitter taste. Overall, it is a refreshing summer sake. It is well-balanced and can be drunk easily. The yeast seems to be different from last year's, and judging from the other reviews, it may be a different one. (It's also possible that my taste buds are wrong...) If that's the case, I look forward to it every year! This year's was my favorite type❣️.

I bought it two years ago when I visited the brewery in the fall. Somehow I lost the chance to drink it and had it in the back of my refrigerator. This sake is made mainly from glutinous rice and is treated as a liqueur because it contains mulberry leaves and cinnamon. My personal first impression was that it reminded me of Yomeishu, the sake that my father used to drink when I was a child and I was allowed to lick a drop of it. The slight sweetness and medicinal aroma of mulberry and cinnabar is refreshing and easy to drink when mixed with lemon soda water
