Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.

Very fruity with acidity, I really like the taste. I don't remember a honjozo like this. It is clear like a ginjo, has a clean aftertaste, and is easy to drink.

There are only two sake rice study groups left. I've been posting them chippy-chippy, so my notes and my memory are no longer connected. But there is no doubt that they were delicious. The ninth bottle was Kami no Ho from Mie Prefecture. The first bottle was a Saku no Kami no Hoho, which got me hooked on sake rice, but it tasted completely different. The aroma is banana, I guess. It has a slightly sweet taste with a refreshing dryness from the microbubbles. It goes on and on... a never-ending type of sake. The next post should be the last in this study of sake rice.

Special Junmai Nigori Nama-zake🍶Kami-no-ho🌾 from Mie Prefecture. Seme smell, fresh✨, a little schwag. Sour and spicy. Mustardy 🙄 according to my wife. When paired with the koji-marinated squid (🦑), it takes the edge off and cozies up to you. The power of koji is amazing 😆. Looks like a new brand to be born in spring 2023. The acidity is distinctive ❕, but it's not just light and fresh. But it's not just light, it's a solid, elegant, high quality sake ✨. I felt a very modern essence in a classic 🤔. And with this flavor, it is recommended to be warmed up to lukewarm ❔. I tried it 🍶. Lukewarm changes the atmosphere of the acidity, it's sweet and sour like hot honey lemon 🍋. It's refreshing to begin with, but even more so: ☺️ It's also a great food sake 👍. I recommend drinking it cold to lukewarm, but after trying many different ways, I thought cold or lukewarm would be better 🤗.

I bought it at Aeon while I went to see a movie today. It's the first time for me to drink it. This is 900ml, isn't it? I thought the shape of the bottle was different. The taste is quite strong, but the aftertaste is refreshing. I think it's a delicious sake ☺️. It's good even if it's heated up☺️.

My Best Sake 🍶 since I first drank it a few years ago. Muscat, green apple 🍏. Mellow and the acidity bounces off the tongue. It's smooth, sweet and umami, and doesn't need any side dishes or accompaniments. Refreshing and fresh. This one bottle is just the kind of flavor that makes one's heart dance. It is perfect to drink on a nice, sunny day. It goes well with a party with friends. I'm going with this one! This is the sake that will make you make such a decision. Hodenasu is a dialect word, It's not really suitable as a gift, It's not really suitable for a gift, but it's a recommended sake that tastes so good that it becomes a hodenasu. LOL! It was a lot in November 2024, It's ok👍It's a good one, but I'm not sure if it's suitable as a gift or not. it's ok👍

It's out again this year! Hode Nasu! It's a tag-team sake from Kadoden Brewery, which is also known as a metamorphosis of rice, and Hagino Brewery, which is known as one of the best sweet and sour brewers in Miyagi Prefecture. While the heady aroma is modest, the tangy gassiness gives the sake a strong umami presence. The sweetness and acidity typical of Hagino Brewery are also present. It is covered with lees and is very satisfying to drink! It is a dangerous sake with a sharpness that makes it easy to drink. Please don't abuse it. (- 迭- )🍶🍶🍶🍶 Today I got a sake called Chushingura that I got as a gift 😀 It says it's first shibori-nama-shu but it was aged at room temperature for more than 6 months 🤣Strong style 🔥💪🏾 but I chilled it before drinking 👀. The aroma is mild🤔. When you put it in your mouth, the rich flavor of rice 🌾 spreads in your mouth 😊👍and it has a nice sharpness so it's a very drinkable sake 😚👌. I don't know about the original raw, but this is a delicious sake 🥳.
