This sake is brewed by Miho Imada, who was selected as one of the "100 Women of the Year" in 2020. I've been wanting to try this sake for a long time because of its high reputation in magazines and without any special glasses.
The first sip was soft and clear like water, and then I felt the sharpness. On the second sip, you can taste the umami and acidity. There is also a slight pleasant bitterness at the end.
It is characterized by the softness of soft water and a clean mouthfeel with no miscellaneous flavors. And yet, it is a modern dry taste with a wide range of flavors, which I personally like very much and it's really delicious!
The aroma and taste are not strong, so it doesn't seem like there is a "this" kind of weapon, but it has no peculiarities and anyone can enjoy it, so I take my hat off to its broad-mindedness. You can drink it all the time... or infinitely.
I am also amazed at its wide range of defenses, going very well with greasy dishes like fried foods and crisp salads.
To use a baseball player's analogy, it's like Shuta Tonosaki of the Seibu Lions, who can defend any position at a high level.
