It was hard to ask them to let me take a picture because they looked so busy, so no picture. The aroma is classic Japanese sake. When you drink it, it is quite refreshing and slightly sweet. The color is dark and I wonder if it has aged a bit. I was allowed to take a picture of it as the restaurant was getting settled, so I switched it out.

Tasted here also at Hankyu Department Store. Junmai Ginjo-shu made with Kuzuryu. It is a refreshingly dry sake, but has a sweet and fruity taste. This time I bought a bottle of unfiltered raw sake made with Jinryoku.

Tasted at Umeda Hankyu Department Store. The rice was said to be Gohyakumangoku. The quality of the sake is clean and refreshing for hiyaoroshi. It is easy to drink without a sense of maturity. As the person in charge said, it is a quiet type of sake, so I think it is suitable for a mealtime drink.

It looks like all of them use locally grown rice, as did the two types of Kitanosho I posted the other day. It seems that only Ryu-ryoku and Koko use Jinryoku all the time. I'm sure there are other places like Okura that use it for single use. When I tasted it, my impression was that it was quite sweet and the second half was heavy, but it was smoky and the flavor of the rice came through with a bang. It has a strong bitterness at the end. It is not the type of sake I would drink on its own, so I will have to wait and see. I don't think it should be chilled too much. If you like Shimane or Tottori area sake, this would be good for you. I think it has a quality of sake that would not be affected by letting it sit for a while. There are glimpses of sweetness and a fruity atmosphere, but I wonder if it's basically more of a classic. Is it a multi-faceted, multi-personality sake?

Today is Valentine's Day!👩❤️👨 This Sake paired very well with the filet mignon I prepared for my wife. There is a full mouth feel with umami. There is a light smoke flavor and wood. The aftertaste is short.

Is this Takezumi's first low-alcohol original sake? It seems to be. The aroma is a bit aged, but there is a sourness and a light gassy feeling. Closing out the drinks we had last weekend 😆. Smell good 😌. The Mikotsuru was quite rich and sweet, so I felt a lot of sourness when I took a sip 😳. The more I drank, the more umami and the sourness and aliveness were also good 👍 I can feel the strong aroma of the barrels! Is this a dry wine? and Nobby Well, I guess it's umakuchi. It is labeled 18 degrees, but you don't feel it. I thought it would have been better if it was warmed up to lukewarm 🤔 I thought so later, but I finished it before I realized it 😆. But I drank a little too much from Thursday to the weekend 😓. I'll enjoy a quiet rest day for the first half of this week 😮💨.

Tonight, I'm opening a bottle of the first bottle of Masamune instrument for the weekend dinner because it's so good it's about to run out 💁. Shikishima Light Nigori Nama Sake 2022BY Back on the nigori road a bit, but again it's almost a year old 😅. When I opened the bottle, I could hear the gas escaping with a nice sound. The aroma is mainly chemically aromatic, with a hint of greffle skin and a little bit of maturity. The mouthfeel changes from sourness and citrus bitterness to bitterness, umami, and spiciness. The alcohol content is 18%, so it has quite a punch, but the sweetness and umami from the aging process gives the impression that it is more rounded. It's good that the lees are so cloudy and the umami and richness is so much better 😊.

This is a record of a sake tavern I stopped by when I was in Shibuya on a business trip. There was Wakakoma, which I had been interested in for a while, so we compared drinks by specifying the brand name. Wakakoma was a beautiful sake. It was comfortable to finish it easily without any sticking point. Kanemaru had a black and white label, which I preferred. The rice flavor was strong and distinct. Delicious! The red and white label had a strong smoky aroma, perhaps a wooden vat feeling, and it was hard to taste it as a sake. Next was Eiko Fuji no Hoshimatsuri. I saw it in the basement of Shibuya Tokyu, but did not buy it because of its high price. I drank one pot of it deliciously and appreciated it as I should have. The white malted rice of Sanzen Sakura was the best discovery of the day. The acidity comes first, but the umami comes soon after. It is really delicious. I think it is one of my favorite sake with acidity attack. I want to drink it again. The last sake is from Kuwana City, Mie Prefecture. This sake is refreshing, but a little bit rich, and quite delicious. The sake sommelier's recommendations offer new discoveries. It was a good way to spend a Friday night.

The rice used is Gohyakumangoku. I bought it at the end of last year at an antenna store in Toyama. I didn't know about this brand. The color is a light amber. The color is pale amber, and the flavor is just as it should be. It's relatively easy to drink because it's crisp and not overpowering, but it didn't seem to suit my partner who likes floral and sweet flavors. It didn't match well with the grilled chicken, but I think it will swell up with time, so I'll leave it for a while. It's quite a unique sake, and I don't dislike it!
